Core Ingredients

  • 10 boiled chestnuts (approx. 150g)
  • 3g agar powder (approx. 1.5 tsp)
  • 150g white bean paste
  • 1/2 paper cup of water (approx. 100ml)
  • 2 Tbsp sugar
  • 2 Tbsp corn syrup (or rice syrup)
  • A pinch of salt

Cooking Instructions

Step 1

First, carefully peel the skin off the boiled chestnuts. It’s easier to peel them while they are still warm.

Step 1

Step 2

Prepare the peeled chestnuts in two ways. Roughly chop half of the chestnuts to maintain a pleasant chewiness, and finely mash the other half using a sieve. This way, you’ll enjoy a delightful contrast between the chewy chestnut pieces and the smooth texture of the jelly.

Step 2

Step 3

In a pot, combine the sieved chestnuts, smooth white bean paste, water, sugar, and a tiny pinch of salt. Cook over medium-low heat, stirring constantly. The salt helps to enhance the sweetness.

Step 3

Step 4

Once the mixture begins to boil, reduce the heat slightly. Add the agar powder and corn syrup (for glossiness). Whisk the agar powder well to prevent lumps, and continue to simmer for about 2-3 minutes until it thickens into a smooth paste.

Step 4

Step 5

Arrange the roughly chopped chestnut pieces attractively in your jelly molds. Then, carefully pour the thickened chestnut jelly mixture over the pieces. Pour gently to ensure the chestnut chunks don’t float to the top, making for a prettier presentation.

Step 5

Step 6

Place the filled molds in the refrigerator and let them set for about 20 minutes. Once firm and chilled, cut into desired portions and enjoy your delicious homemade chestnut jelly. The setting time may vary slightly depending on the thickness of the mold and your refrigerator’s performance.
