  • Granulated Sugar: 100g (approx. 1/2 cup)
  • Water: 30g (approx. 2 tbsp)
  • Heavy Cream: 100g (approx. 1/2 cup)
  • Salt: 1g (a pinch)

Cooking Instructions

Step 1

Begin by preparing all the necessary ingredients for your delicious caramel sauce. You can keep the heavy cream cool for now, as it will be used shortly.

Grab a small, deep saucepan or pot. Add the water (30g), sugar (100g), and salt (1g) to the pot. Crucially, do not stir the mixture at this stage! Stirring can cause sugar crystals to form or clump. Place the pot over medium heat and let it come to a boil.

As the sugar and water mixture begins to bubble vigorously, you’ll notice the color slowly changing from a pale brown to a deeper amber hue. At this exact moment, turn off the heat immediately! If the caramel burns, it will develop a bitter taste. Capturing that beautiful golden-brown color is key.

Right after turning off the heat, carefully and slowly pour in the heavy cream (100g), which should be slightly warmed (about 30 seconds in the microwave). Be cautious, as the hot caramel will bubble up vigorously when the cream is added. Hold the pot handle securely and stir quickly and gently to combine, ensuring no lumps form and it doesn’t overflow. The goal is a smooth, homogenous mixture.

Once the heavy cream is fully incorporated and blended with the caramel, place the pot back over very low heat. Simmer gently to thicken the sauce slightly. If you lift your spoon, the sauce should coat it and flow off with a slight lag. Avoid over-thickening, as the caramel will continue to thicken as it cools.

Your warm and fragrant homemade caramel sauce is ready! Transfer the finished sauce to a clean glass jar or storage container. It can be stored in the refrigerator for up to a week. When you’re ready to use it, simply warm it gently in the microwave for about 10 seconds to restore its smooth, pourable consistency.
