Ingredients

  • 1 bunch of Kyoho grapes (approx. 500g-700g)
  • 400ml water
  • 130g granulated sugar
  • 1 Tbsp store-bought lemon syrup or homemade lemon syrup (optional)

First, let’s sterilize the glass jars where your canned grapes will be stored. Fill a pot with about half its capacity of water. Place the glass jars upside down in the pot. It’s crucial to start with cold water and gradually heat it up, as placing cold jars directly into boiling water can cause them to crack.

Turn the heat to medium and bring the water to a gentle boil. Once you see small bubbles forming on the inside of the jars, continue boiling for about 5 more minutes. This ensures thorough sterilization.

Carefully remove the hot, sterilized jars using tongs. Also, place the lids in the boiling water for about 1 minute to sterilize them as well. Ensure both jars and lids are properly sanitized.

After sterilization, place the jars and lids upright on a clean kitchen towel. This allows any remaining moisture to evaporate naturally due to air exposure, speeding up the drying process and minimizing the risk of mold.

Use paper towels or a clean cloth to meticulously dry the inside of the jars, ensuring no moisture is left, especially in the corners. Residual moisture is a common cause of mold, so a thorough drying is essential for preservation.

Prepare the grapes by carefully separating them from the bunch. Wash them thoroughly under running water, using baking soda or vinegar to ensure any dust or impurities are completely removed from the skin.

Place the washed grapes into a measuring container with clear markings. We’ll be aiming for a ratio of Grapes : Water : Sugar = 1 : 1 : 0.3. Using a measuring container for the grapes makes it easy to accurately determine the amount of water and sugar needed.

Now, let’s make the syrup. In a pot, combine 400ml of water and 130g of granulated sugar. Turn the heat to high and begin heating.

Once the sugar has completely dissolved and the syrup starts to boil, carefully add the prepared grapes to the pot.

As the syrup with the grapes begins to bubble and foam, start timing. If your grapes are very soft or overripe, boil for 3 minutes. If they are firm and crisp, you can boil for up to 5 minutes. Be careful not to overcook, as the grapes can become mushy.

Finally, add 1 tablespoon of store-bought or homemade lemon syrup for a touch of refreshing tartness and to enhance preservation. If you don’t have lemon syrup, you can omit this step or use a little lemon juice.

While the grape mixture is still hot, carefully ladle it into the sterilized jars, filling them almost to the brim. Seal tightly with the lids. Then, invert the jars completely and let them cool down. Once cooled, store them in the refrigerator. Inverting the jars helps create a vacuum seal, extending their shelf life. You’ll know it’s sealed properly when you hear a ‘pop’ sound upon opening!
