Shabu-Shabu Ingredients

  • 1kg Fresh Beef (for Shabu-Shabu)
  • 2 King Oyster Mushrooms
  • 1/2 pack Oyster Mushrooms
  • 1 pack Enoki Mushrooms
  • 4 heads Bok Choy
  • 10 leaves Mini Napa Cabbage
  • 300g Bean Sprouts

Vietnamese Summer Roll Ingredients

  • 1/2 Beetroot
  • 1/2 Carrot
  • 2 bunches Perilla Leaves (Shiso)
  • 3 Bell Peppers (one of each color: red, yellow, orange)
  • 1 Onion
  • 1/8 head Cabbage
  • 1/2 pack Salad Sprouts

Rich & Savory Shabu-Shabu Broth

  • 3L Water
  • 20 Dried Anchovies (for broth)
  • 4 Dried Frigate Tuna (for savory depth)
  • 8 Dried Prawns (for umami)
  • 6 sheets Kombu (kelp, approx. 5x6cm size)
  • 1 Onion
  • 2 stalks Green Onions (scallions)
  • 1/4 daikon radish
  • 1 handful Bonito Flakes
  • 1 Tbsp Salt
  • 3 Tbsp Fish Sauce

Cooking Instructions

Step 1

First, let’s prepare the rich and savory broth for your Shabu-Shabu. In a pot, combine the water and all the broth ingredients (dried anchovies, dried frigate tuna, dried prawns, kombu, onion, green onions, daikon radish). Bring to a boil over high heat, then reduce to low heat and simmer for at least 30 minutes to allow the flavors to fully meld. Once the broth is deeply infused, strain it through a sieve for a clear liquid. Season with fish sauce and salt to taste. You can add more salt if needed to achieve your desired flavor balance.

While the broth is simmering, prepare your fresh vegetables for the Shabu-Shabu. Wash the bok choy thoroughly and trim off the tough bottom ends for a neat presentation.

Clean the mini Napa cabbage leaves and trim any bruised or discolored outer leaves. Prepare them for dipping into the hot broth.

Prepare the mushrooms by trimming off any tough ends. This includes the king oyster mushrooms, oyster mushrooms, and enoki mushrooms.

For the king oyster mushrooms, slice them thinly to ensure they cook quickly and evenly in the hot broth.

Now, let’s get the vibrant vegetables ready for your Vietnamese summer rolls. Thinly julienne the beetroot and carrot. Their bright colors will make your rolls visually appealing.
