Easy Recipe for ‘Stone-Baked’ Eggs Using an Electric Rice Cooker
Let’s make delicious baked eggs with a wonderfully firm and chewy texture! This recipe uses a simple electric rice cooker to create ‘Goo-un Gyeran,’ also known as ‘Maekbanseok Gyeran’ (stone-baked eggs). We’ll use a 50-minute cycle, but for a richer color and deeper flavor, you can extend it to a 270-minute cycle. Enjoy these delightful eggs with their perfect texture!
Ingredients- 12 large eggs
- 1 Tbsp coarse salt
- 600ml water
- 2 Tbsp vinegar

Step 1
First, prepare your eggs. To ensure they don’t crack during cooking, take the 12 eggs out of the refrigerator and let them sit at room temperature for at least 1 hour. This temperature equalization helps prevent them from breaking due to sudden heat changes.

Gently wash the eggs under running water to remove any dirt or debris from the shells. Be careful not to scrub too hard, as this could crack the shells. A soft brush or your hands will work perfectly.

Here’s a helpful tip for cleaner shells and reduced cracking: soak the washed eggs in a vinegar solution for a short while. After soaking for about 5 minutes, rinse them gently again under running water. This step helps to sterilize the shell surface and strengthen it slightly.

Next, prepare the salt water solution. Pour 600ml of water into a bowl and add 1 tablespoon of coarse salt. Stir gently until the salt is completely dissolved. This solution will add a subtle flavor and help create the chewy texture.

Pour the prepared salt water into the inner pot of your electric rice cooker.

Place a steaming rack inside the rice cooker pot. If you don’t have a steaming rack, you can line the bottom of the pot with a clean kitchen towel or a piece of cheesecloth, and place the eggs directly on top.

Carefully arrange the washed and soaked eggs on the steaming rack or the towel, making sure they don’t touch each other too much to avoid cracking. Look at them all nestled together – you can already imagine how deliciously firm and chewy they’ll become!

Now, it’s time to set your rice cooker! Select the ‘Steam’ or ‘Multi-Cook’ function and set the timer for 90 minutes. While one 90-minute cycle will yield tasty baked eggs, repeating this process 2 to 3 times will give you a richer color and an even chewier texture. (e.g., run the 90-minute cycle three times.) If the water level gets low between cycles, add a little more warm water. You can also use other appliances like an ‘Oko’ cooker or a slow cooker with a steaming function.

Your long-awaited baked eggs are finally ready! While they are still warm, carefully peel one open. You’ll discover a wonderfully firm egg white and a chewy, moist yolk – the perfect texture of a delicious baked egg, just like you’d get from a specialty store!
