  • 110g Beef for grilling
  • 1 Persimmon
  • 1 handful Lettuce or Perilla leaves

Cooking Instructions

Step 1

I decided to create a simple yet healthy salad using tofu noodles, a product I recently discovered and was intrigued by. These noodles look like pasta but are made from tofu, offering a fantastic plant-based protein source. They are noted as having only 3g of carbohydrates and 15g of protein per serving, plus they are gluten-free and contain just 160kcal per 100g. It’s a great option for anyone looking for a nutritious meal.

Step 2

Take one pack of the tofu noodles. Rinse them gently under cold running water to remove any excess liquid or a subtle bean-like aroma, which enhances their clean taste. After rinsing, place them in a colander to drain thoroughly.

Step 3

Prepare the beef for grilling (about 110g). Sear it on both sides in a hot pan until nicely browned. To ensure it stays juicy, avoid flipping it too often; instead, wait until the top surface shows some ‘blood’ (juices) before flipping and cooking the other side. Once cooked, slice it into bite-sized pieces.

Step 4

Peel and core one ripe persimmon, which should be wonderfully sweet this time of year. Slice the persimmon into pieces roughly the same size as the beef. The natural sweetness of the persimmon will add a delightful contrast to the savory elements.

Step 5

All the components for our beautiful salad are now ready. We have the delicate tofu noodles, savory grilled beef, sweet persimmon, and fresh greens.

Step 6

Start assembling the salad by spreading the sliced persimmon evenly across the bottom of your serving plate or bowl. This layer provides a sweet foundation for the salad.

Step 7

Next, arrange the sliced grilled beef and the lettuce or perilla leaves (torn into pieces by hand) attractively over the persimmon. Using fresh greens will add a lovely crispness.

Step 8

Now, pile the drained tofu noodles in the center of the salad, creating a generous mound. This makes the tofu noodles the star of the dish.

Step 9

Finally, prepare the simple dressing. In a small bowl, whisk together 1 tablespoon of soy sauce and 2 tablespoons of perilla oil. Drizzle this aromatic dressing evenly over the entire salad. The nutty fragrance of the perilla oil complements the tofu noodles beautifully.

Step 10

And there you have it – a delicious and healthy Tofu Noodle Salad! This recipe yields about 2 servings. Feel free to adjust the soy sauce and perilla oil to your preference. It’s a quick, satisfying meal perfect for breakfast or as a light, healthy dinner option. Enjoy your creation!
