Got plenty of canned tuna and some leftover vegetables? Turn them into a delightful meal that’s surprisingly easy and incredibly tasty! These pancakes are a hit with all ages, especially children. The combination of rice, fresh vegetables, and savory tuna makes for a satisfying and nutritious meal you’ll want to make often.
Main Ingredients- 2 cans tuna (drained)
- 1 king oyster mushroom
- 1/2 onion
- 3 Tbsp minced carrot
- 3 Tbsp minced zucchini
- 2 eggs
- 2 Tbsp pancake mix
- 2 bowls cooked rice

Cooking Instructions
Step 1
First, drain the canned tuna thoroughly using a sieve, keeping only the solid part. Finely chop the king oyster mushroom, onion, and zucchini into bite-sized pieces. Ensure the carrots are also finely minced, preparing about 3 tablespoons. Finely chopping the vegetables ensures they cook evenly and provide a pleasant texture in the pancakes.
Step 2
In a large bowl, combine the drained tuna and all the prepared minced vegetables. Crack in the 2 eggs, add the 2 tablespoons of pancake mix, and pour in 2 bowls of freshly cooked, warm rice. Use a spoon to gently mix everything together until well combined, being careful not to mash the rice grains. The goal is a cohesive mixture.
Step 3
Heat a generous amount of cooking oil in a frying pan over medium-low heat. Using a ladle, scoop portions of the mixture and place them into the hot pan. Gently press down on each portion with a spatula to form flat, round pancakes. Cook until one side is golden brown and crispy, then carefully flip and cook the other side until equally golden. Adjust the heat as needed to prevent burning.
