Main Ingredients

  • 300g Bulgogi-cut beef (thinly sliced)
  • 3 Shiitake mushrooms
  • 1 handful Dried glass noodles (approx. 50g)
  • 1 Onion
  • 1/2 Green onion stalk

Broth

  • 2 cups (400ml) Kelp broth (Dashima broth)

Cooking Instructions

Step 1

First, prepare the glass noodles. Take a handful of dried glass noodles and soak them in cold water for about 20 minutes until softened. Soaking them now will shorten the cooking time and allow the noodles to absorb the delicious broth later.

Next, prepare the vegetables. Thinly slice 1 onion and cut 1/2 green onion stalk into large pieces. Remove the tough stems from the shiitake mushrooms and cut the caps into quarters or bite-sized pieces.

Now, let’s make the delicious bulgogi marinade and marinate the beef. In a bowl, combine 4 Tbsp soy sauce, 2 Tbsp mirin, 1/2 Tbsp sugar, 1 Tbsp plum extract, 1 Tbsp minced garlic, the finely chopped 1/2 green onion stalk, a pinch of black pepper, and 1 Tbsp sesame oil. Mix well to create the marinade. Add 300g of bulgogi-cut beef to the marinade and gently toss to coat. Let it marinate for about 10 minutes. Marinating the beef ensures the flavors penetrate deeply, enhancing its deliciousness.

In a ttukbaegi (earthenware pot), add the sliced onion and 2 cups (400ml) of kelp broth. Bring to a rolling boil over high heat. Once the onion turns translucent and the broth is boiling, add the marinated beef. Stir gently with chopsticks to separate the meat and prevent clumping as it cooks.

Finally, add the soaked glass noodles and sliced shiitake mushrooms to the pot. Let it boil vigorously for another moment until the noodles and mushrooms are tender and have absorbed some of the savory broth, about 2-3 minutes. Your delightful Ttukbaegi Bulgogi is now ready to be served! Enjoy this warming dish with a bowl of rice.
