This is an honest review based on my personal purchase and use. ^^ Today, I made a tofu curry packed with soft and savory tofu! You don’t need to worry about tofu making the curry less tasty; the curry itself is so flavorful that it enhances every ingredient. This tofu curry is also an excellent healthy option for a diet meal. If you load it up with tofu and skip the rice, it becomes a fantastic diet meal! (Though I did have about half a bowl of rice with mine.) I’ve also included a generous amount of various vegetables to ensure a well-balanced meal. Even those who aren’t typically fond of tofu will find themselves enjoying it immensely – the delicious curry sauce makes the tofu incredibly soft, sweet, and savory, almost like tasting honey. For dieters, filling your bowl with plenty of vegetables and tofu instead of rice will provide a satisfying and healthy meal, thanks to the filling nature of tofu and protein. Just as they say ‘even fried shoes taste good,’ curry has a magical quality that makes almost any ingredient taste amazing. This allows you to be bold and add ingredients you might normally shy away from. For instance, I had some kale leftover from wraps that was starting to wilt, so I chopped it finely and added it to the curry. It softened beautifully, almost disappearing into the sauce, and its distinct flavor was completely masked by the rich curry aroma. You could even experiment by pureeing green vegetables to create a ‘green curry’ for a unique twist! This new experiment with tofu in curry was a resounding success. It was so delicious, I feel like I could eat curry for every meal and never get tired of it. ^^

Main Ingredients

  • T.Asia Curry Powder 1 packet
  • Tofu 1/2 block
  • Beef (for curry) 300g
  • Potato 1
  • Zucchini 1/2
  • Onion 1/2
  • Carrot 1/4
  • Eggplant 1/3
  • Cabbage 1-2 leaves
  • Kale 10 leaves
  • Cooking oil 2 Tbsp
  • Water 500ml (reserve 50ml for mixing curry powder)

Cooking Instructions

Step 1

Cut the tofu into approximately 1.5-2cm cubes. Lightly pat the cut tofu dry with paper towels. Heat a frying pan over medium heat, add cooking oil, and pan-fry the tofu cubes until golden brown and slightly firm. This pre-frying step prevents the tofu from breaking apart too much in the curry and adds a pleasant texture.

Set the pre-fried tofu aside, as it will be added towards the end of the cooking process. The tofu will be slightly firm on the outside and soft on the inside.

Wash and prepare the potatoes, carrots, zucchini, cabbage, and eggplant. Peel them if necessary. Chop all the vegetables into similar-sized cubes, about 1.5-2cm, similar to the tofu. Slice the onion (or dice it), and finely chop the kale.

Heat a deep pot or wok over medium heat and add 2 tablespoons of cooking oil. Add the beef for curry and sauté until it’s no longer pink on the outside. The rendered fat from the beef will help sauté the vegetables.

Once the beef is partially cooked, add the chopped potatoes, carrots, zucchini, eggplant, and cabbage to the pot. Stir-fry them together for about 2-3 minutes until the vegetables begin to soften slightly and their surfaces become slightly translucent. This helps to enhance their flavor.

Pour 450ml of water into the pot with the sautéed vegetables and beef, and stir well. Add the chopped kale at this stage. Once the water comes to a boil, reduce the heat to medium-high, cover the pot, and let it simmer for about 10 minutes, or until the vegetables are tender. Reserve about 50ml of water for later to mix with the curry powder.

In a separate small bowl, combine the T.Asia Curry Powder packet with the reserved 50ml of water. Whisk thoroughly until smooth, ensuring there are no lumps. To prevent the curry powder from clumping when added to the hot stew, it’s best to turn off the heat temporarily before stirring in the dissolved curry mixture, or to stir it in gradually while whisking constantly.

After adding the curry mixture, reduce the heat to medium-low. Stir continuously with a spatula to prevent the curry sauce from sticking to the bottom of the pot and to ensure it’s well combined. As the sauce thickens, carefully add the pre-fried tofu cubes.

Once the tofu is added, continue to simmer gently for another 3-5 minutes, allowing the curry sauce to coat the tofu evenly and for the flavors to meld. Avoid overcooking at this stage. Your delicious tofu curry is now ready.

Serve the tofu curry generously over a bowl of warm rice. For a healthier, lower-carb option, you can skip the rice and fill your bowl with extra vegetables and tofu.
