This Spam Kimchi Stew is perfect with a hot bowl of rice. Making it in a 1-2 serving earthenware pot yields just the right amount for two people. First, prepare your ingredients. Slice the Spam into bite-sized pieces. Cut the onion in half and slice it thinly or into rough cubes. If you have green onions, chop them finely to add at the end; I used frozen ones. If you have anchovy-kelp broth ready, great! If not, rice water is a good substitute for a savory flavor.

Take about 1 cup of well-fermented kimchi, chopped into manageable pieces. Heat a little cooking oil in your earthenware pot and stir-fry the kimchi. If your kimchi is very sour, you can add a pinch of sugar at this stage to balance the flavor. Since we’re not using meat, stir-frying the kimchi well is key to developing a deep flavor.
Step 4
Once the kimchi is somewhat softened and fragrant, add the sliced onion and continue to stir-fry. Cook until the onion becomes slightly translucent and releases its sweet aroma.

Now it’s time to add the broth. I used a ladle to measure the broth I had freshly boiled, about 5 to 6 ladles. Using plenty of broth makes the stew much richer and more flavorful.

After adding all the broth, pour in about 1 ladle of kimchi brine. This brine adds a wonderful savory depth and a touch of spiciness to the stew.

Once the broth and kimchi mixture comes to a rolling boil, add all the prepared Spam. Stir occasionally to prevent the stew from sticking to the bottom.
