Ingredients

  • 1 package (approx. 300-400g) soft tofu (sundubu)
  • 2 cups (400ml) water
  • 200g can of SPAM
  • 1 handful of Vienna sausages (approx. 5-6)
  • 1/2 onion
  • 1 bunch of enoki mushrooms
  • 1 handful of aged kimchi (approx. 100g)
  • 1 stalk of green onion (scallion)
  • 1 Tbsp cooking oil
  • 1 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp red chili flakes (gochugaru)
  • 2 tsp soy sauce
  • 0.5 tsp sugar

Cooking Instructions

Take about half of the SPAM (100g), place it in a zip-top bag, and mash it coarsely using a rolling pin or the back of a spoon. Mashing it this way allows the SPAM’s flavor to infuse more deeply into the broth, enriching its taste.

Slice the onion thinly (about 0.5cm thick) or dice it finely. Finely chop the green onion. Slice the remaining SPAM (100g) and Vienna sausages into bite-sized pieces (about 1cm thick). Chop the aged kimchi into manageable pieces, about 1cm wide. Trim the woody base from the enoki mushrooms and rinse them lightly under running water.

Heat a pot or Korean earthenware pot over medium-low heat. Add 1 Tbsp of cooking oil and 1 Tbsp of sesame oil. Add the chopped green onion and 1 Tbsp of red chili flakes. Stir-fry them gently, being careful not to burn, to create chili oil. You’ll notice a delicious aroma as the green onion and chili flakes cook down.

Once the chili oil is fragrant, add the chopped aged kimchi to the pot and stir-fry it over medium heat. To mellow the sourness of the kimchi and add depth of flavor, add 0.5 tsp of sugar at this stage and continue to stir-fry.

After the kimchi has been stir-fried sufficiently, add the mashed SPAM and sliced onion. Sauté them together for about 1-2 minutes until the onion becomes translucent. The SPAM’s fat will render slightly, blending the flavors of the ingredients.

Now, pour in 2 cups (400ml) of water. Add all the sliced SPAM and Vienna sausages. Increase the heat to high and bring the stew to a rolling boil.

Once the stew begins to boil vigorously, reduce the heat to medium. Stir in 1 Tbsp of minced garlic and 2 tsp of soy sauce to season. Taste the broth and adjust the seasoning; if it’s too bland, add a little more soy sauce or salt. It’s important to taste and adjust the seasoning gradually.

While the stew is simmering over medium heat, carefully add the package of soft tofu. Using a spoon, gently break the soft tofu into 2-3 large pieces within the pot. Avoid stirring too vigorously to maintain the tofu’s soft texture.

Let the stew simmer for another 2-3 minutes until the tofu is heated through. Then, arrange the prepared enoki mushrooms on top for presentation. The stew is ready once the enoki mushrooms are slightly wilted. If you prefer a spicier kick, you can add a chopped Cheongyang chili pepper at this stage.
