Stew Main Ingredients

  • 1/2 bunch green onions
  • 1 chili pepper (red or green)
  • 1/2 onion
  • 1/4 zucchini
  • 200g Spam (1 can)
  • 1 package soft tofu
  • 2 eggs

Flavor Enhancing Seasonings

  • 1 Tbsp minced garlic
  • 1 Tbsp allulose (or sugar)
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp oyster sauce
  • 3 Tbsp soy sauce
  • Pinch of black pepper
  • 300ml water

Cooking Instructions

Step 1

Prepare the vegetables. Finely chop the green onions. Cut the zucchini into 1cm thick half-moons, then make cross-shaped scores on each piece. Slice the onion as desired, and finely chop the chili pepper for color.

Step 2

Prepare the Spam. Open the 200g can of Spam. Mash about half of it using a fork or your hands to release its savory flavor into the broth. Slice the remaining half into bite-sized pieces.

Step 3

Heat a moderate amount of cooking oil in a pot over medium-low heat. Add the mashed Spam and stir-fry until it turns a deep brown color. This process helps to render the Spam’s fat and infuse the broth with its rich umami flavor.

Step 4

Add 1 Tbsp of minced garlic, the chopped green onions, and chili pepper to the pot with the fried Spam. Stir-fry together until fragrant. Add 1 Tbsp of allulose (or sugar) and mix well with the other ingredients.

Step 5

Turn off the heat temporarily and add 3 Tbsp of gochugaru. Stir and cook using the residual heat of the pot. This prevents the chili flakes from burning while allowing them to release their oils and color, creating a delicious base for the stew.

Step 6

Add 3 Tbsp of soy sauce and stir to combine the seasonings. Turn the heat back on. Once the stew comes to a gentle boil, add 2 Tbsp of oyster sauce and stir well.

Step 7

Pour in 300ml of water and add the prepared zucchini and onion. Once the stew begins to boil again, add the soft tofu (cut into quarters) and the sliced Spam.

Step 8

Season with a pinch of black pepper. Cover the pot and let it simmer over medium-low heat until the vegetables are tender and the flavors have melded. Allow sufficient time for the stew to develop its deep flavor.

Step 9

Reduce the heat to low. Crack the 2 eggs into the stew and let them cook gently until set. Your delicious Spam and soft tofu stew is now ready to be enjoyed with a bowl of rice!
