Key Ingredients

  • 1 can Mokwoo-chon Spam (Spam)
  • 1 bowl of cooked rice
  • 1 bowl of ripe kimchi
  • A little green onion (thinly sliced)
  • 1 fresh egg
  • 1/2 onion (finely chopped)
  • A pinch of sugar (to mellow the kimchi’s tartness)
  • A little sesame oil (for nutty aroma!)
  • A little gochugaru (Korean chili flakes, adjust to taste)

Cooking Instructions

Step 1

First, lightly oil a pan and stir-fry the finely chopped kimchi until fragrant and softened. Once the kimchi is cooking nicely, cut the Mokwoo-chon Spam into bite-sized pieces (cubes or strips) and add it to the pan. Stir-fry them together until a delicious aroma emerges from the Spam and kimchi. Since the Spam releases some oil, you might not need to add much extra cooking oil.

Step 1

Step 2

When the kimchi and Spam are sufficiently stir-fried, add the thinly sliced green onions and finely chopped onion. Continue to stir-fry until the vegetables become translucent and release their fragrant aromas. The sweetness from the onions and the refreshing scent of the green onions will add a richer flavor.

Step 2

Step 3

Once all the ingredients are well-stir-fried, it’s time to season! Add the gochugaru (Korean chili flakes) and sugar, and adjust the seasoning to your preference. If you enjoy a spicier kick, add more gochugaru. If you’re making this for children, consider reducing or omitting the gochugaru and adding a little more sugar for sweetness. Drizzle in a bit of sesame oil at this stage to enhance the nutty fragrance.

Step 3

Step 4

Add the warm bowl of cooked rice to the seasoned mixture in the pan. Using a spatula or spoon, gently stir and mix the rice with the other ingredients, ensuring that the rice grains are separated and evenly coated with the flavorful mixture. Continue to stir-fry until the rice becomes glossy and well-combined.

Step 4

Step 5

Finally, transfer the delicious Spam and kimchi fried rice to a serving plate. In the same or a separate pan, lightly oil and fry an egg until the whites are set and the yolk is still runny (over-easy or sunny-side up). Carefully place the fried egg on top of the fried rice. Break the yolk and mix it into the rice for an incredible taste experience! Enjoy your hearty Spam and kimchi fried rice!
