If you have a lot of Spam at home and want to use it up, try this Spam and Egg Fried Rice recipe! It’s a simple yet satisfying meal that’s perfect for any time. Make this crowd-pleasing fried rice easily at home.
Main Ingredients- 1 can Spam (approx. 200g)
- 1/2 onion
- 1/2 green onion stalk
- 2 bowls cooked rice
- 3 eggs
Seasonings & Aromatics- 1 Tbsp oyster sauce
- A pinch of sesame seeds
- 4 cloves garlic, minced (or 1/2 Tbsp)

- A pinch of salt (adjust based on Spam’s saltiness)

Cooking Instructions
Step 1
First, prepare the green onion to add flavor to your fried rice. Chop the white and green parts of the green onion into bite-sized pieces, about 1cm in size. This helps the seasoning penetrate well and improves the texture when stir-frying.

Next, prepare the onion. Peel and wash half an onion, then dice it into small pieces, about 1cm, similar to the green onion. Onions caramelize and sweeten when cooked, adding a delicious umami to the fried rice.
Step 3
Now, chop the star ingredient, Spam, into bite-sized pieces. You can dice it into about 1cm cubes or slice it thinly, according to your preference. Dicing provides a chewier texture, while thin slices can become crispier.

Let’s make the scrambled eggs! Heat about 1 tablespoon of cooking oil in a pan over medium heat. Crack the 3 eggs into a bowl, add a pinch of salt, and whisk well. Pour the egg mixture into the hot pan. Stir with chopsticks to create soft scrambled eggs. Be careful not to overcook them to maintain a moist texture.
Step 5
Transfer the cooked scrambled eggs to a separate plate for now; they will be added back later. Sprinkle a little black pepper over the scrambled eggs to enhance their aroma.

To build the flavor base, add about 1 tablespoon of cooking oil to the cleaned pan. Add the chopped green onion and onion, and stir-fry over medium-low heat. It’s important to cook them until fragrant and slightly softened without burning, allowing the green onion oil and onion sweetness to release. Stir-fry for about 2-3 minutes.
Step 7
Finely mince 4 cloves of garlic. Minced garlic is a crucial ingredient that elevates the flavor of fried rice. (Alternatively, you can conveniently use 1/2 tablespoon of pre-minced garlic.)
Step 8
Add the diced Spam and minced garlic to the pan with the onions and green onions. Stir-fry together for about 2-3 minutes until the Spam is lightly browned and the garlic is fragrant. If there’s excess oil from the Spam, you can carefully drain some of it with a paper towel.
Step 9
Now it’s time for the rice! Add 2 bowls of freshly cooked warm rice to the pan. Stir and toss well with the Spam, onion, and green onion mixture, ensuring the rice grains are separated. Use a spatula to gently break up any clumps. Continue stir-frying until the seasoning coats each grain of rice.
Step 10
As the fried rice is nearing completion, add the pre-made scrambled eggs back into the pan. Stir-fry gently for about 2 more minutes, allowing the eggs to blend with the rice. Add 1 tablespoon of oyster sauce to season. Taste and add a pinch of salt if needed.
Step 11
