Hearty Soft Tofu & Sausage Stew (Budae-jjigae Style)

This recipe is incredibly useful! If you’re tired of the same old stews, try adding canned ham to your soft tofu stew for a delightful twist! It’s a flavor combination you won’t forget.

Recipe Info

  • Category : Stew
  • Ingredient Category : Beans / Nuts
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Difficulty : Beginner

Main Ingredients

  • 1 block soft tofu
  • 100g canned ham
  • 6 Vienna sausages
  • 1/4 onion
  • 1/4 green onion

Cooking Instructions

Step 1

First, prepare your vegetables. Finely chop 1/4 onion and thinly slice 1/4 green onion diagonally. These will add a subtle sweetness and aroma as they cook.

Step 1

Step 2

Next, prepare the ham and sausages. Dice 100g of canned ham into bite-sized pieces (about 1cm thick). For the 5-6 Vienna sausages, make a few shallow cuts (a cross shape works well) – this helps them absorb more flavor and cook evenly.

Step 2

Step 3

Heat a large pot or deep pan over medium heat. Add a splash of cooking oil, then add the chopped onion and green onion. Sauté for about 2 minutes until fragrant. Sautéing the aromatics first will build a deeper flavor base for the stew.

Step 3

Step 4

Add 1 packet of the commercial soft tofu stew seasoning to the sautéed vegetables. Stir and cook for another minute. Toasting the seasoning briefly enhances its savory notes and aroma.

Step 4

Step 5

Now, let’s build the broth. Pour in 300ml of beef or bone broth and bring it to a rolling boil over high heat. Using a rich broth like this will give the stew a robust and satisfying depth of flavor.

Step 5

Step 6

Once the broth is boiling, add the diced canned ham and sliced Vienna sausages. Continue to boil vigorously for another 2-3 minutes. The meats will release their delicious flavors into the broth, making the stew even richer.

Step 6

Step 7

Finally, gently add the block of soft tofu. Place it in the pot and break it up into large chunks with the back of your spoon a few times – avoid over-mashing to maintain a tender, silky texture. Let it simmer for about 1-2 minutes until the tofu is heated through.

Step 7

Step 8

It’s almost ready! For a beautiful finish and extra richness, gently crack 1 egg into the center of the stew. Top it with 1 slice of cheese, allowing it to melt over the hot stew. This creates a wonderfully creamy and savory broth. Once the cheese has melted, your delicious Soft Tofu Budae-jjigae is complete! Enjoy.
