Hearty Shrimp and Clam Fried Rice

For my seafood-loving child, I’ve quickly prepared a nutritious fried rice packed with plenty of clams and shrimp. This recipe allows you to create a satisfying meal in a short amount of time. Experience an even more flavorful fried rice with the savory umami of oyster sauce and the aromatic essence of scallions!

Main Ingredients

  • 10 Shrimp (peeled and deveined)
  • 1 handful Clam meat (approx. 50g)
  • 1 bowl Cold cooked rice (warmed up)
  • 1 Egg

Cooking Instructions

Step 1

Rinse the frozen clam meat under cold water to thaw. For the shrimp, remove the shells and devein them, then wash them in clean water. Pat them dry to prevent the fried rice from becoming watery.

Finely mince the scallion, using both the white and green parts. This method preserves the scallion’s flavor while minimizing the chewy texture, making it more palatable for children.

Heat 3 tablespoons of cooking oil in a heated frying pan. Add the finely minced scallion and stir-fry over medium-low heat, being careful not to burn it. A fragrant scallion oil will begin to form, releasing a delicious aroma.

Once the scallion aroma is well-developed, add the prepared clam meat and shrimp. Stir-fry quickly over high heat for about 1-2 minutes, until the shrimp turn pink and the clam meat is cooked.

Push the ingredients to one side of the pan. Pour 1 tablespoon of soy sauce into the empty space. Allowing the soy sauce to caramelize slightly on the hot pan will create a deeper flavor.

When the soy sauce begins to bubble, mix it thoroughly with the cooked seafood. Continue to stir-fry briefly to ensure the soy sauce evenly coats all the ingredients.

Now it’s time for the egg. Crack 1 egg into the empty space on the other side of the pan. Use chopsticks or a spatula to stir and scramble the egg. It’s best to scramble it until it’s slightly undercooked, as this will add a softer texture to the fried rice.

Combine the scrambled egg with the other ingredients in the pan. Add 1 bowl of warmed cooked rice. Gently break up any clumps of rice with your spatula as you stir-fry.

Add 1 teaspoon of oyster sauce for extra flavor. Press down firmly on the rice with your spatula while stir-frying to ensure the sauce is evenly distributed throughout the grains. Continue to cook until the rice grains are separated and lightly toasted.

Once all ingredients are beautifully stir-fried, turn off the heat. Drizzle in 1 teaspoon of sesame oil for a finishing touch. The nutty aroma of the sesame oil will further enhance the flavor of the fried rice. Mix gently and your delicious shrimp and clam fried rice is ready!
