  • 2 bowls of cooked rice (preferably cold/leftover)
  • 1/2 tsp salt
  • Pinch of black pepper
  • 2 slices of ham
  • A small amount of carrot (finely julienned)
  • 1/4 onion (finely julienned)
  • A small amount of chives (chopped)
  • 3 eggs
  • 1 handful of king oyster mushrooms (finely julienned)
  • Cooking oil (for frying)

Hello everyone! Today, we’re going to make ‘Bapjeon’ (rice pancakes), a delicious and satisfying dish perfect for using up that slightly leftover rice that often accumulates after feeding the family. This recipe is a fantastic way to create a fulfilling meal or a tasty snack with minimal effort, and it’s also a great way to clear out your fridge!

First, let’s prepare the vegetables and ham for our rice pancakes. Finely julienne the onion, carrot, and king oyster mushrooms. Chop the chives. Place these prepared vegetables and ham into a large bowl. Add the 2 bowls of cooked rice. Season the mixture with 1/2 teaspoon of salt and a pinch of black pepper for a balanced flavor.

Now, using your hands or a spatula, thoroughly mix the vegetables, ham, and seasoned rice. It’s important to gently break up any clumps of rice and ensure that all the ingredients are evenly distributed throughout the mixture. This step forms the base of our bapjeon batter.
