Hearty Potato Soup: A Satisfying Meal with Textural Goodness

Hearty Potato Soup with Chunky Bits

This chunky potato soup was once featured as a late-night snack by IU on a TV show, but I personally find it to be a perfect, hearty breakfast option. The satisfying texture of the potato chunks, combined with the creamy soup, makes for a wonderfully filling meal. Let me guide you through making this comforting soup step-by-step!

Recipe Info

  • Category : Soup (Western style)
  • Ingredient Category : Vegetables
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • 2 medium Potatoes
  • 1/2 Onion (optional)
  • 500ml Milk
  • 1 Tbsp Butter
  • Salt to taste
  • Black Pepper to taste

Cooking Instructions

Step 1

Begin by thoroughly washing the potatoes and onion. Peel the potatoes and dice them into small, bite-sized cubes, about 1 to 1.5 cm. Finely chop the onion as well. The onion adds sweetness and depth of flavor, but you can omit it if you prefer not to have onion in your soup.

Step 1

Step 2

Melt 1 tablespoon of butter in a pot over medium-low heat. Once the butter has melted, add the diced potatoes and onion. Sprinkle a pinch of salt over them. Sauté the vegetables for about 5-7 minutes until the onion becomes translucent and the potatoes are lightly golden. This sautéing step is crucial for developing a richer flavor in your soup.

Step 2

Step 3

Once the vegetables are nicely sautéed, pour in 500ml of milk. Ensure there’s enough milk to cover the potatoes and onions generously. If you prefer a thinner soup consistency, feel free to add a little more milk.

Step 3

Step 4

Reduce the heat to medium and let the soup simmer, uncovered, allowing it to thicken. Cook for about 10-15 minutes, or until the potatoes are tender and the soup has reached a slightly creamy consistency. Finally, stir in the cheese slices until they are completely melted. You can use cheddar, mozzarella, or any cheese you enjoy – it will add a lovely creamy and savory note.

Step 4

Step 5

While the soup is simmering, let’s prepare the bacon topping. Place 2 strips of bacon in a separate frying pan and cook over medium heat until crispy, flipping them occasionally. You can pat off any excess bacon grease with a paper towel for a cleaner finish. If you don’t have bacon, this step can be skipped, but its salty crunch is a wonderful contrast to the soup. Alternatively, you can toast small pieces of bread in butter and use them as a topping.

Step 5

Step 6

Now, it’s time to season the soup. Adjust the saltiness to your preference. Remember that the bacon topping will add saltiness, so be careful not to over-salt the soup itself. Ladle the warm, creamy potato soup into a bowl. Generously sprinkle the finely chopped crispy bacon over the top. A little crack of black pepper will also enhance the flavor. Enjoy your hearty and delicious potato soup!
