On a special holiday when the whole family gathered after a long time, I made a hearty pork belly kimchi fried rice for brunch! This kimchi fried rice is made by stir-frying kimchi and thinly sliced pork belly in fragrant scallion oil until wonderfully sweet. Topping it with a sunny-side-up egg and mixing it all together adds another layer of deliciousness. It’s a simple yet satisfying meal that will capture everyone’s taste buds.
Essential Ingredients- 3 Tbsp cooking oil
- 1 stalk green onion (separate white and green parts)
- 1/4 onion (finely chopped)
- 1.5 cups aged kimchi (finely chopped)
- Pinch of herb salt (or regular salt)
- 200g thinly sliced pork belly
- 2 bowls cooked rice (warm rice is best)
- 1 Tbsp toasted sesame seeds
- A little sesame oil (for finishing)
- 1 fried egg (sunny-side up recommended for extra deliciousness)
Cooking Instructions
Step 1
Heat a deep pan or wok over medium-high heat and add 3 tablespoons of cooking oil. Add the white parts of 1 stalk of green onion, sliced thinly, and the finely chopped 1/4 onion. Stir-fry until fragrant to create a delicious scallion oil and aromatic vegetable base.
Step 2
Once the vegetables begin to turn translucent, add 1.5 cups of finely chopped aged kimchi. Stir-fry the kimchi until its sourness mellows and its savory flavor intensifies. Be mindful of the heat to prevent the kimchi from burning.
Step 3
When the kimchi is well-fried, add 200g of thinly sliced pork belly and season with about 3 pinches of herb salt. Break up the pork belly as it cooks and stir-fry until it’s completely cooked through and has rendered its delicious fat.
Step 4
Add 2 bowls of warm cooked rice to the stir-fried ingredients. Gently mix everything together with a spatula or spoon, being careful not to mash the rice grains. Ensure the rice is evenly combined with the other ingredients.

Here’s a special step to enhance the fried rice’s flavor! Press the rice down onto the bottom of the pan with the back of your spoon or spatula and stir-fry. This creates a slightly crispy, toasted rice texture and adds a wonderful nutty flavor, similar to ‘nurungji’ (scorched rice).
Step 6
Finally, add the green parts of the remaining green onion, sliced thinly, and sprinkle with 1 tablespoon of toasted sesame seeds. Stir-fry once more briefly. Transfer the kimchi fried rice to a serving plate, top with a perfectly sunny-side-up fried egg, and drizzle with a little sesame oil to your preference.
