This Kimchi Jjigae is packed with thick, generous pieces of pork, yet it’s surprisingly not greasy and incredibly satisfying. It’s a true ‘rice thief’ that will have you reaching for seconds!
Main Ingredients- Pork (stew cut) 200g
- Well-fermented Napa Cabbage Kimchi 400g
Seasoning & Aromatics- Minced Green Onion 3 Tbsp
- Minced Garlic 1 tsp
- Sugar 1 Tbsp
- Black Pepper a pinch

Cooking Instructions
Step 1
Cut the well-fermented Napa cabbage kimchi into bite-sized pieces and place generously into a pot. Using aged kimchi will result in a deeper, more complex flavor.
Step 2
Prepare the pork for the stew. Pork neck or belly can be used, but for a satisfying chew, it’s best to cut it into thick slices rather than thin ones. Add the pork to the pot along with the kimchi.
Step 3
Add minced garlic, sugar, and pepper to remove any pork odor and enhance its savory flavor. Sauté just until the surface of the pork turns white. Overcooking at this stage can make the meat tough.
Step 4
Pour in enough broth or water to just cover the sautéed kimchi and pork. Bring to a boil over high heat for 10 minutes, then reduce to medium-low heat and simmer for another 10 minutes. This allows the kimchi to soften and the flavors to meld. Taste and adjust seasoning with salt or soy sauce if needed.
Step 5
As the stew nears completion, add a generous amount of minced green onion for a fresh aroma. Simmer for about 2 more minutes to allow the onion’s fragrance to infuse into the broth. You can also add other vegetables like onion, chili peppers, or mushrooms for added texture and flavor.
