Chicken Soup Ingredients- Harim Nurungji Chicken Soup Meal Kit (for 2 servings)
- Scallions (chopped) 3 Tbsp
- Black Pepper 1 tsp
- Chicken Stock (or water) 750ml
- Crispy Nurungji (toasted rice crust) 10 pieces
- Soju (for blanching chicken) 2 Tbsp
Spicy Dipping Sauce Ingredients- Gochujang-based sweet and spicy sauce (Chojang) 2 Tbsp
- Minced Garlic 1 tsp
- Scallions (chopped) 1 Tbsp
- Fresh Wasabi 1 tsp
- Gochujang-based sweet and spicy sauce (Chojang) 2 Tbsp

Cooking Instructions
Step 1
Prepare the Harim Nurungji Chicken Soup meal kit. The cooking instructions are clearly printed on the side of the package, making it easy for even beginners to follow.
Step 2
Check the contents of the meal kit. It typically includes the chicken, nurungji, chicken stock, and Hwanggi (astragalus root), common in Samgyetang. If preparing from scratch, you’ll need stir-fry cut chicken, store-bought chicken stock, and nurungji.
Step 3
Place the prepared chicken in a pot, add enough water to cover, and bring to a boil with 2 Tbsp of soju. This initial blanching helps to remove any impurities and excess fat from the chicken.
Step 4
After blanching, drain the chicken and rinse it under clean water. Transfer the blanched chicken to a clean pot. Add the nurungji, Hwanggi, and chicken stock.
Step 5
Add the chopped scallions to the pot with the chicken for added aroma and flavor.

Pour in 750ml of chicken stock (or water) and bring to a rolling boil over high heat. Let it simmer until the chicken is tender and the nurungji has softened, approximately 20-30 minutes. Once the chicken is cooked through, remove the Hwanggi packet. Taste the broth; the chicken stock usually provides enough saltiness, but you can add a pinch of black pepper to adjust. Turn off the heat.

Prepare the dipping sauce. Instead of a simple soy-wasabi mix, create a sauce inspired by Dongdaemun’s Dakhanmari: combine 2 Tbsp of gochujang-based sauce (Chojang), 1 tsp of minced garlic, 1 Tbsp of chopped scallions, and 1 tsp of fresh wasabi. Mix well.
