Packed with fiber-rich mushrooms and satisfying dumplings, it’s a meal you can enjoy without guilt. We’ve used chicken breast dumplings for an even lighter option, though they disappeared quickly! This recipe makes a generous portion, ideal for sharing. Its deep, comforting broth and abundant ingredients make it a delightful and filling centerpiece for any meal.
Main Ingredients- 100g Shiitake mushrooms (soak dried ones if using)
- 100g Oyster mushrooms
- 2 large King oyster mushrooms
- 1 pack Enoki mushrooms
- 100g Bok choy
- 70g Zucchini
- 1 medium Onion
- 1 stalk Green onion
- Dumplings (e.g., chicken breast dumplings, to taste)
- 1 handful Dried anchovies for broth (optional if using pre-made broth)
Seasoning & Broth- 3 Tbsp Soy sauce for soup (Guk-ganjang)

- 500-600ml Broth or water (mushroom soaking water can be used)

Cooking Instructions
Step 1
Begin by preparing all your vegetables and mushrooms for the hot pot. If you’re using dried shiitake mushrooms, soak them in lukewarm water until fully rehydrated. Don’t discard the soaking water; it adds a wonderful aroma to the broth! Fresh shiitake mushrooms are also a great option.
Step 2
Slice the king oyster mushrooms and oyster mushrooms into bite-sized pieces. Trim the root end of the enoki mushrooms and separate them into strands. Arrange the prepared mushrooms and the cleaned bok choy, zucchini, onion, and green onion attractively in your hot pot. If you don’t have ready-made broth, place the dried anchovies at the bottom of the pot to create a flavorful base. For added texture, you can also layer bean sprouts at the bottom. (Using homemade anchovy broth will make this even quicker.)
Step 3
Pour the prepared broth or water into the hot pot. If you used dried shiitake mushrooms, add their soaking water to the pot for an extra layer of flavor. Bring the pot to a boil over high heat. Once simmering, add the minced garlic and soy sauce for soup to season the broth. Finally, add the dumplings and cook until they are fully cooked through.
