  • 1 packet of Samyang Ramen
  • 150g pork (your preferred cut)
  • 600cc water (approx. 3 cups)
  • 1/2 stalk green onion (about 40g)
  • 1 Tbsp minced garlic
  • 1 Tbsp red pepper flakes (gochugaru)

Pork Marinade

  • 1 Tbsp soy sauce
  • 1 Tbsp mirin (rice wine)
  • 1/3 Tbsp sugar

Cooking Instructions

Step 1

First, let’s prepare the green onion, which adds a wonderful aroma and flavor. Thinly slice half a stalk of green onion (about 40g) into strips. While diagonal cuts are also fine, julienned green onions are easier to scoop up with the noodles. (The measuring spoon mentioned refers to a standard 8cc Korean rice spoon. Next, we’ll marinate the pork. In a bowl, combine 150g of pork with the marinade ingredients: 1 Tbsp soy sauce, 1 Tbsp mirin, and 1/3 Tbsp sugar. Mix well and let it marinate for 30 minutes. This allows the pork to absorb the flavors and become tender. (I used leftover pork from making japchae. If using other cuts, pork belly or neck are recommended for their good balance of meat and fat. Note: 1 Tbsp soy sauce ≈ 8g, 1 Tbsp mirin ≈ 8g, 1/3 Tbsp sugar ≈ 3-4g).

Now, let’s begin the stir-frying process. Heat 2 Tbsp of cooking oil in a pan over medium-low heat. Once the oil is warm, add 1 Tbsp of minced garlic and sauté until it turns a light golden brown, being careful not to burn it, to release its fragrant aroma.

As the garlic becomes golden, add the julienned green onions to the pan. Stir-fry until they soften slightly. Then, add 1 Tbsp of red pepper flakes and stir well, cooking over medium heat.

After adding the red pepper flakes, quickly stir everything together for about 10-20 seconds to lightly toast the spices. Once fragrant, add the marinated pork. Continue to stir-fry over medium heat until the pork is about 70% cooked.

When the pork is sufficiently cooked, add the soup base and dried vegetable mix from the ramen packet. Stir-fry together with the other ingredients for about 20-30 seconds. This step is crucial for developing the deep flavor of the jjamppong! Stir-frying the seasoning with the ingredients makes a significant difference compared to just adding it to the broth. Ensure you do this over medium heat.

Once the seasoning and ingredients are well combined and stir-fried, pour in the water. Use 600cc of water (approximately 3 cups). Using about 50cc more water than the standard amount will result in a richer broth.

Bring the broth to a boil, then add the ramen noodles. Cook according to the package instructions. Look at that rich, flavorful broth! Your meat jjamppong ramen is ready, and it’s so good, you won’t miss your favorite Chinese restaurant’s version!
