Since there are no good sundae-guk delivery services in my neighborhood, I decided to make it myself! I ordered fresh ingredients for sundae-guk through mobile grocery shopping and am excited to share how to easily make this comforting soup at home. Perfect for chilly days, this soup is packed with flavorful broth and plenty of ingredients. Enjoy a delicious bowl of sundae-guk in the comfort of your own home!

Sundae-guk Ingredients (Serves 1)

  • 300g store-bought beef bone broth (Sagol soup)
  • Sundae (Korean blood sausage, as desired)
  • Offal (e.g., tripe, liver, as desired)
  • 1/3 stalk large green onion (scallion)
  • A handful of chives
  • 1 Tbsp perilla seed powder
  • 1 tsp salted shrimp

Seasoning Mix (Dadaegi)

  • 1 Tbsp red pepper flakes
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp soup soy sauce
  • 1 Tbsp beef bone broth
  • A pinch of black pepper

Cooking Instructions

Step 1

In a pot, combine the 300g of store-bought beef bone broth with 1/2 cup of water. Bring it to a boil, then reduce the heat to medium-low and simmer for a short while to deepen the flavor.

While the broth is simmering, prepare your sundae and offal in an earthenware pot (ttukbaegi). Cut them into bite-sized pieces. Once the beef bone broth is boiling, carefully ladle the hot broth into the earthenware pot. It’s best to fill it enough to cover the ingredients.

Now, let’s make the seasoning mix, or ‘dadaegi,’ which adds a rich flavor to the sundae-guk. In a small bowl, mix together 1 Tbsp red pepper flakes, 1/2 Tbsp minced garlic, 1/2 Tbsp soup soy sauce, 1 Tbsp beef bone broth, and a pinch of black pepper. This dadaegi will be added later to enhance the deep, savory taste of the soup.

Once the sundae-guk in the earthenware pot begins to boil again, add 1 tsp of salted shrimp to season the soup to your liking. Salted shrimp is the secret ingredient for adding a savory depth and umami to the broth.

When the soup is at a rolling boil, turn off the heat. Finely chop about 1/3 of a large green onion and add it to the pot. Also, chop a handful of chives into appropriate sizes and add them in. The fresh aroma of the green onions and chives will further enhance the soup’s overall flavor.

Finally, generously sprinkle 1 Tbsp of perilla seed powder over the soup for a nutty and rich finish. Your delicious sundae-guk is now ready! Enjoy it while it’s hot.
