  • Spam (or your favorite canned ham) – about 1/3 can
  • Onion – about 1/4
  • Green onion (white part) – about 2cm length
  • Carrot – about 1/5
  • Warm cooked rice – 1 bowl
  • Zucchini – about 1/3

Seasonings (based on 1 tablespoon for rice)

  • Cooking oil – 2 Tbsp
  • Salt – a pinch (adjust to taste)
  • Sesame seeds – a pinch
  • Oyster sauce – 1 Tbsp
  • Black pepper – a pinch
  • Sesame oil – 1/2 Tbsp

Cooking Instructions

Step 1

Dice all the vegetables (onion, green onion, carrot, zucchini) and ham into small, bite-sized pieces (about 0.5cm). Ensure the rice is warm; it will help prevent clumping when stir-frying.

Heat a frying pan over medium heat and add 2 tablespoons of cooking oil. Add the chopped white part of the green onion and stir-fry until fragrant, releasing its aroma. Infusing the oil with scallion flavor significantly enhances the fried rice’s taste.

Once the green onions become translucent, add the diced onion. Continue to sauté until the onion is also translucent and has released its sweetness. Be careful not to burn the onions while stir-frying.

Now, add the diced carrots, zucchini, and ham. Sprinkle with a pinch of black pepper to eliminate any gamey smell from the ham. Stir-fry over high heat for about 2 minutes, just until the vegetables are slightly tender-crisp. The key is to maintain a pleasant crunchiness in the vegetables.
