Main Ingredients

  • 2 medium potatoes
  • 170g ham (use your favorite like Spam or Luncheon meat)
  • 1/2 medium onion
  • 1 Korean chili pepper (adjust to your spice preference)

Seasoning

  • 2 Tbsp soy sauce
  • 1/2 Tbsp oyster sauce
  • 1 Tbsp brown sugar
  • 1 soju cup water (approx. 100ml)

Cooking Instructions

Step 1

First, prepare all ingredients by cutting them into bite-sized pieces. Dice the potatoes, ham, and onion into about 1.5cm cubes. Finely chop the Korean chili pepper. Rinse the diced potatoes lightly under cold running water to remove excess starch, then drain them completely. (This step helps prevent the potatoes from clumping together and ensures a neat stir-fry!)

Heat 2 Tbsp of canola oil in a wok or a wide pan over medium heat. Add the diced potatoes and ham and stir-fry them lightly until they are coated with oil and start to turn golden brown.

Spread the ingredients evenly in the pan, then cover with a lid and reduce the heat to low. Let the potatoes ‘roast’ or ‘bake’ in the pan. This method helps the potatoes cook through until tender on the inside while achieving a slightly chewy texture on the outside. Cook for about 5-7 minutes.

Periodically lift the lid and gently stir the ingredients to prevent them from sticking to the pan. Continue stir-frying until the potatoes become translucent and are almost fully cooked.

Once the potatoes are nearly cooked, pour in the 1 soju cup of water. Add 2 Tbsp soy sauce, 1/2 Tbsp oyster sauce, and 1 Tbsp brown sugar. Stir well to distribute the seasonings evenly.

Stir-fry quickly over medium heat, tossing the ingredients with the sauce to allow it to absorb well without burning. Gently mix with chopsticks or a spatula.
