Hearty Galbi Bulgogi Rice Rolls
Delicious Galbi Bulgogi Rice Rolls Recipe (Picnic Lunchbox, Galbi Gimbap, Beef Gimbap)
Tired of deciding what to cook every meal? I found some galbi bulgogi in the freezer and decided to use it with the leftover chives in the fridge to make these delicious galbi bulgogi rice rolls. The savory-sweet galbi combined with crisp vegetables makes this a perfect meal or picnic lunchbox option.
Main Ingredients- 3 pieces of Galbi Bulgogi (Korean marinated grilled short ribs)
- 5 eggs
- 5 strips of imitation crab (surimi)
- 10 strips of simmered burdock root
- 5 strips of pickled radish (danmuji)
- 5 strips of kimbap ham
- 1 bunch of chives
- 5 sheets of kimbap seaweed (nori)
- 3 bowls of cooked rice
Cooking Instructions
Step 1
First, whisk the 5 eggs until smooth. Slowly cook them over low heat to make 5 rolled omelets. Making them slightly thick will make them look more appealing as kimbap filling.
Step 2
Place the 3 pieces of galbi bulgogi in a pan and grill until golden brown on both sides. Pre-grilling the galbi bulgogi makes it even softer and more delicious when added to the kimbap. (Reference: For the galbi bulgogi recipe, please see @7000836.)
Step 3
In a bowl, combine 3 bowls of warm cooked rice with 1 Tbsp sesame oil, 0.5 Tbsp salt, and 1 Tbsp toasted sesame seeds. Mix thoroughly to season the rice. Gently mix to avoid mashing the rice grains.
Step 4
Lightly grease a pan with cooking oil and grill the kimbap ham until golden brown and cut into desired lengths. Wash the chives thoroughly and remove excess water. You can also blanch the chives briefly before using.
Step 5
Spread the seasoned rice thinly over about 3/4 of a sheet of kimbap seaweed. Arrange the prepared rolled omelet, galbi bulgogi, imitation crab, burdock root, pickled radish, kimbap ham, and chives neatly on top of the rice. Do not overfill. Starting from one end, roll the kimbap tightly.
Step 6
You will have 5 kimbap rolls in total. For a glossy finish and enhanced flavor, lightly brush the outside of the kimbap with sesame oil before slicing.
Step 7
Slice the finished kimbap into bite-sized pieces. To slice cleanly, lightly dampen your knife with water or coat it with sesame oil to prevent the rice from sticking. Enjoy your delicious galbi bulgogi kimbap!
