Ingredients- Beef cubes 400g
- All-purpose flour 2 Tbsp
- Coarse salt 2 pinches
- Black pepper 2 pinches
- Olive oil (generous amount)
- Onion 1
- Garlic cloves 2
- Tomato paste 2 Tbsp
- Beef broth 1 L
- Bay leaves 2
- Dried thyme (or fresh) to taste
- Carrots 1 cup (diced)
- Potatoes 1 cup (diced)
- Mushrooms 1 cup (sliced)
Cooking Instructions
Step 1
First, take the 400g of beef cubes and toss them with 1 Tbsp of flour, 2 pinches of coarse salt, and 2 pinches of black pepper until evenly coated. Heat a generous amount of olive oil in a pan over medium-high heat. Sear the beef cubes until nicely browned on all sides, just to create a nice crust without cooking them through. Remove the beef from the pan and set aside. This step helps to lock in the juices for a tender result.
Step 2
In the same pot you used for the beef, add a little more olive oil if needed. Sauté the chopped onion (1) and minced garlic cloves (2) over medium heat until the onion is softened and translucent. Stir in the tomato paste (2 Tbsp) and cook for about a minute until fragrant. Add the remaining 1 Tbsp of flour and stir well to combine, cooking for another minute to create a roux. Gradually pour in the beef broth (1 L), whisking constantly to prevent lumps. Once smooth, return the seared beef to the pot along with the bay leaves (2) and thyme. Stir everything together and bring to a simmer.
Step 3
Once the stew is simmering, reduce the heat to low, cover the pot, and let it cook for about 40 minutes, allowing the beef to become tender. After 40 minutes, add the diced carrots (1 cup), diced potatoes (1 cup), and sliced mushrooms (1 cup) to the pot. Stir, cover again, and continue to simmer for another 40 minutes, or until the vegetables are tender. Finally, taste the stew and adjust the seasoning with salt, pepper, or even a pinch of oregano if desired. Serve hot and enjoy the rich, deep flavors of your homemade beef stew.
