Hearty Doenjang Jjigae with Radish, Made with Homemade Soybean Paste
Quick and Flavorful Doenjang Jjigae Using Common Pantry Ingredients!
This recipe for Doenjang Jjigae (Korean soybean paste stew) is made the traditional way from my hometown, incorporating radish for a wonderfully earthy and comforting flavor. Seeing my daughters enjoy it so much makes cooking a joy. Experience the authentic, delicious taste of Korean home cooking!
Main Ingredients- Homemade Doenjang (Korean soybean paste) 1.5 Tbsp (using an adult-sized spoon)
- Water 5 cups (using a paper cup for measurement)
Seasonings & Other Ingredients- Gochugaru (Korean chili flakes) to taste
- Minced garlic 1 Tbsp
- Dried anchovies for broth 10 fish (pre-roasted in a dry pan and stored in the freezer)
- Scallions to taste
- Radish to taste (sliced thinly)

Cooking Instructions
Step 1
In a ttukbaegi (earthenware pot) or a regular pot, add 5 cups of water (measured with a paper cup). Add the pre-roasted dried anchovies (you can place them in a mesh bag for easy removal later, or just add them directly if you plan to fish them out) and the thinly sliced radish.
Step 2
If you have shiitake mushrooms, add them at this stage. (It’s okay to proceed without them.)
Step 3
Bring the pot to a simmer over medium heat and let it cook for about 15 minutes, allowing the flavors to meld. If you added whole anchovies, remove and discard them after 15 minutes.
Step 4
For a richer flavor, pre-mix the doenjang with the seasonings. In a small bowl, combine 1.5 Tbsp of homemade doenjang, 1 Tbsp of minced garlic, and a pinch of gochugaru. Mix well.
Step 5
Add the mixed doenjang paste to the broth (after removing the anchovies) and bring it back to a simmer. It’s important to dissolve the doenjang thoroughly to prevent clumps. Cook over medium-low heat.
Step 6
Finally, add a generous amount of diagonally sliced scallions and let it simmer for a brief moment. Your delicious and aromatic Doenjang Jjigae is ready! Serve hot and enjoy.
