The ultimate choice for a delicious diet without calorie worries! Tofu noodles are a fantastic substitute for regular pasta. Today, we’re making a rich and flavorful tofu noodle stir-fry, generously loaded with nutritious ground pork. The irresistible sweet, savory, and slightly spicy sauce will create a satisfying meal that everyone will love!
Main Ingredients- Tofu noodles, 2 packs (drained)
- Ground pork, 150g
- Onion, 1/2 medium (thinly sliced)
- Scallion, 20cm (chopped)
- Egg, 1
- Sesame seeds, 1 Tbsp (toasted and crushed)
- Cooking oil
Special Sauce- Soy sauce, 2 Tbsp
- Oyster sauce, 1 Tbsp
- Tonkatsu sauce, 2 Tbsp (adds sweetness and depth)
- Sugar, 1/2 Tbsp
- Black pepper, 1 tsp
- Gochugaru (Korean chili flakes), 1/2 Tbsp (adjust to taste)
- Sesame oil, 1 Tbsp
- Soy sauce, 2 Tbsp
- Oyster sauce, 1 Tbsp
- Tonkatsu sauce, 2 Tbsp (adds sweetness and depth)
- Sugar, 1/2 Tbsp
- Black pepper, 1 tsp
- Gochugaru (Korean chili flakes), 1/2 Tbsp (adjust to taste)
- Sesame oil, 1 Tbsp
Cooking Instructions
Step 1
Drain the liquid from the tofu noodle packaging. Rinse them lightly under running water and place them in a colander to drain thoroughly. This step is crucial to prevent sogginess when stir-frying and to maintain a firm texture.
Step 2
Prepare the toasted sesame seeds for added nutty flavor. Crush 1 Tbsp of toasted sesame seeds using a mortar and pestle or a grinder. Sprinkling crushed sesame seeds at the end will make the dish look even more appetizing.

Wash and peel half an onion, then thinly slice it for stir-frying.
Step 4
Chop a 20cm piece of scallion into bite-sized pieces, using both the white and green parts. The aromatic flavor released when sautéing the scallions will enhance the dish’s taste.

Heat a wok or a deep pan over medium heat and add a generous amount of cooking oil. Add the chopped scallions and sliced onions and stir-fry until they become translucent and fragrant.

Once the scallions and onions are fragrant, add the ground pork. Sprinkle with black pepper to eliminate any gamey odors. Break up the pork with chopsticks or a spatula to prevent clumping and stir-fry until it turns brown and is fully cooked.

Now it’s time to add the delicious sauce ingredients. You can pour 2 Tbsp of soy sauce to one side of the pan and let it caramelize slightly before mixing; this enhances the umami flavor. (Optional)

Next, add 1 Tbsp of oyster sauce and 2 Tbsp of Tonkatsu sauce. The Tonkatsu sauce adds a unique sweetness and complexity that makes the dish taste even more special.

Add 1/2 Tbsp of sugar for a touch of sweetness. You can adjust the sugar amount according to your preference.

If you prefer a little heat, add 1/2 Tbsp of gochugaru (Korean chili flakes). Omit or adjust the amount if you’re serving this to children.

Finally, drizzle in 1 Tbsp of sesame oil to complete the savory aroma.

Stir-fry all the sauce ingredients together over medium heat until well combined and fragrant, ensuring nothing burns. Mix thoroughly so that the sauce evenly coats all the ingredients.

Push the cooked ground pork and vegetables to one side of the pan. Crack the egg into the empty space and scramble it until cooked. Once the scrambled egg is almost set, break it up and mix it well with the ground pork. The soft scrambled egg adds another layer of deliciousness to the stir-fry.

Add the drained tofu noodles to the pan. Stir everything together gently to coat the noodles and ingredients with the sauce. Continue to stir-fry for another 1-2 minutes, allowing the tofu noodles to absorb the flavors. Be careful not to overcook the tofu noodles, as they can become mushy.

Transfer the finished tofu noodle stir-fry to a serving plate. Sprinkle generously with the crushed toasted sesame seeds prepared earlier for a beautiful presentation and delightful nutty crunch. Enjoy your meal!
