  • 1/2 chicken, cut into pieces
  • 5-6 whole garlic cloves
  • 2 slices ginger
  • 1 Korean herbal tea bag (Ssanghwacha)
  • 1 stalk green onion
  • Pinch of black pepper
  • 2 bowls of cooked rice

Cooking Instructions

First, thoroughly wash the chicken pieces. To ensure a clear broth, it’s recommended to parboil the chicken pieces in boiling water to remove impurities, then rinse them under cold water. After rinsing, place the chicken back into the pot.

Add the whole garlic cloves, ginger slices, and the Ssanghwacha tea bag to the pot with the chicken. Nowadays, herbal tea bags are readily available, allowing you to easily achieve a deep and healthy flavor without needing many separate ingredients. Pour in enough water to generously cover everything.

Now, bring the pot to a boil over high heat and simmer, covered, for about 30 minutes. You’ll see the delicious broth infusing from the chicken and other ingredients. After simmering for 30 minutes, the chicken should be tender.

Carefully remove the cooked chicken pieces from the pot. While you could shred the chicken and add it back immediately, letting it cool slightly before shredding will result in a cleaner presentation.

Once the removed chicken has cooled down a bit, separate the meat from the bones and shred the meat into bite-sized pieces. Set the bones aside as they will be added back to the broth.

Return the de-boned chicken carcass to the pot, and let the broth simmer a bit longer. Adding the bones back allows for even more depth of flavor and nutrients to infuse into the soup, truly bringing out the essence of Dak Gomtang. Slice the green onion diagonally as desired.

Take a look at the rich, flavorful chicken broth. The subtle herbal notes from the Ssanghwacha tea bag blend beautifully with the chicken flavor, creating an exquisite taste. Since Dak Gomtang is traditionally served with rice, ‘to-ryeom’ the rice by pouring the hot broth over it in the bowl; this will make the rice absorb the broth, resulting in an even more delicious and warm experience. Garnish the finished Dak Gomtang with the shredded chicken meat and sliced green onion, and add a pinch of black pepper.
