Hearty Curried Kidney Bean & Tuna with Roasted Potatoes
Simple Yet Special! Kidney Bean Tuna Curry Stir-fry Served with Perfectly Roasted Potatoes

Today, I’m sharing a wonderfully simple yet surprisingly special dish that’s perfect for brunch, a satisfying snack, or even a delightful appetizer when guests visit. It’s guaranteed to be a crowd-pleaser, so be sure to give it a try!
Main Ingredients- 1 can Kidney Beans
- 1 can Tuna
- 1/3 Onion
- 2-3 Tbsp Curry Powder (adjust to taste)
- Potatoes (frozen or fresh), as needed
Seasoning & Others- 1-2 Tbsp Olive Oil
- Water or Chicken Stock (for consistency)

Cooking Instructions
Step 1
First, prepare the canned kidney beans and tuna. Drain the liquid from the kidney bean can and set aside. For the tuna, drain the oil completely. (Tip: Canned kidney beans are already seasoned and cooked, making them incredibly convenient for quick meals! I often use them for beef chili, and they add a wonderful flavor to this dish as well.)

Step 2
Finely dice about 1/3 of an onion. Ensure it’s chopped small for even cooking.

Step 3
Heat 1-2 tablespoons of olive oil in a pan over medium-low heat. Add the diced onion and sauté until it becomes transparent. (Tip: Sautéing onions until translucent helps bring out their natural sweetness, enhancing the overall flavor of the dish.)

Step 4
Once the onions are translucent, add the drained tuna (from 1 can) and the drained kidney beans (from 1 can). Stir-fry together for about 1-2 minutes until well combined.

Step 5
Now, add 2-3 tablespoons of curry powder and mix it evenly with the ingredients. Pour in a little water or chicken stock to achieve your desired consistency. (Tip: For a pop of color and extra texture, you can add some canned or frozen peas at this stage.) Stir until everything is well incorporated. Turn off the heat. Step 6
Wash your potatoes and prepare them for roasting. Place them in an air fryer preheated to 180°C (350°F) and cook for about 15-20 minutes, or until golden brown and crispy. (Tip: If you don’t have an air fryer, you can bake them in the oven or pan-fry them. Adjust cooking time based on the size of the potato pieces.)
