Hearty Chicken & Dumpling Soup Made in a Rice Cooker
Rice Cooker Recipe: Single-Serving Chicken and Dumpling Soup for Energy Boost
Easily boost your energy with this simple chicken and dumpling soup made in a rice cooker! The chicken adds extra nourishment.
Main Ingredients
- 4 pieces chicken (thawed)
- 300ml water
- 6 dumplings
Cooking Instructions
Step 1
First, prepare 4 pieces of chicken. If using frozen chicken, ensure it is fully thawed. Place the thawed chicken pieces into your rice cooker. Pour in 300ml of clean water. For a single serving, 4 pieces of chicken felt like the perfect amount.
Step 2
To ensure the chicken cooks thoroughly and becomes tender, add the chicken and 300ml water to the rice cooker. Then, add 3 Tbsp of perilla powder, 1 Tbsp of onion powder, 1 Tbsp of dried anchovy powder, and 1 Tbsp of soup soy sauce. Use your rice cooker’s ‘reheat’ or ‘cook’ function and set it for 9 minutes. (Tip: I used red onion powder, which gave the soup a slightly reddish hue. Using onion powder is convenient as you don’t need to chop fresh onions, and it stores well in the freezer, contributing to a clear broth.)
Step 3
Once the first cooking cycle (9 minutes of reheating) is complete, carefully open the rice cooker. Gently add the 6 dumplings and a handful of chopped green onions. Then, set the rice cooker to ‘reheat’ or ‘cook’ again for another 9 minutes. Be sure to place the dumplings gently to avoid them bursting.
Step 4
Your delicious chicken and dumpling soup is ready! 🙂 The perilla powder creates a wonderfully rich and nutty broth, perfect for enjoying with a bowl of rice. Enjoy this warm and comforting soup, especially on a chilly day.
