  • 113g Chicken Breast

Cooking Instructions

Step 1

【Make the Dough】 First, let’s make the dough that will be the base of our calzone. In a bowl, combine the peeled sweet potato, banana, peanut butter, allulose, and salt. Mash or mix them together with your hands until smooth. There’s no need for separate proofing or resting; once all the ingredients are evenly combined, it’s ready to use, making it very convenient! It’s complete when you have a soft and cohesive dough.

Step 2

【Prepare the Jjajang Filling – Vegetable Prep】 Now it’s time to make the delicious chicken breast jjajang filling. Prepare the onion, cabbage, zucchini, and green onion. Dice all these vegetables into small, uniform cubes. Dicing them this way ensures they cook evenly and provides a good texture. Prepare the chicken breast by pre-boiling or steaming it.

Step 3

【Sauté Vegetables】 Heat a generous amount of cooking oil in a pan over medium heat. Add all the diced vegetables and sauté until they become slightly golden brown. It’s important to sauté the vegetables thoroughly to bring out their natural sweetness. Once the vegetables are somewhat cooked, add 1 heaping tablespoon of minced garlic, 1 heaping tablespoon of chunjang (black bean paste), and 1/2 tablespoon of oyster sauce, and stir-fry together to release their aroma.

Step 4

【Add Seasonings】 Next, we’ll add the seasonings to enhance the flavor. Add 1 tablespoon of dark soy sauce (or regular soy sauce) and 1.5 tablespoons of allulose, stirring well to combine them with the vegetables. Allulose adds sweetness while being low in calories, making it a great option for those on a diet.

Step 5

【Final Seasoning】 Finally, add 5 twists of black pepper (adjust to your preference) and an additional 1/2 tablespoon of soy sauce to adjust the overall seasoning. Stir-fry for a little longer until all the seasonings are well incorporated with the vegetables.

Step 6

【Add Chicken Breast】 Add the pre-cooked, moist chicken breast (about 1 piece) to the jjajang filling, shredding it finely with a fork or your hands. Gently stir-fry to mix the chicken with the sauce, but be careful not to overcook, as it can become dry. Stir-fry for just 1-2 more minutes. Your delicious chicken breast jjajang filling is ready!

Step 7

【Roll Out the Dough】 Now, take out the prepared dough. Lightly dust a work surface with flour and place the dough on it. Use a rolling pin to roll out the dough into a circle about 3mm thick. If it’s too thick, it will take longer to cook; if it’s too thin, it might tear, so aim for a moderate thickness.

Step 8

【Fill the Calzone】 Spread a generous amount of the chicken breast jjajang filling onto the rolled-out dough. Leave about a 1cm border around the edge where you’ll place the filling. If desired, sprinkle a little shredded mozzarella cheese on top for an even richer and tastier calzone.

Step 9

【Shape the Calzone】 Fold one side of the dough over the filling to create a half-moon shape. Press the edges firmly with your fingers to seal them well. Then, use a fork to crimp the edges. This not only makes the calzone look nice but also helps prevent the filling from leaking out. It will look like a cute little pocket pie!

Step 10

【Brush with Egg Wash】 To give the calzone a beautiful golden-brown color when baked, we’ll apply an egg wash. In a small bowl, whisk together 1 egg yolk, 1/2 tablespoon of allulose, and a pinch of salt. Use a pastry brush to evenly coat the top of the calzone with the egg wash. This will give it a glossy, appetizing finish after baking.

Step 11

【Air Fryer Baking】 Now it’s time to bake the calzone in the air fryer. Place the calzone in the air fryer basket and bake at 180°C (350°F) for 11 minutes. After 11 minutes, carefully flip the calzone, lightly spray it with cooking oil spray, and then bake for another 5 minutes at 180°C (350°F). This will result in a crispy outside and a moist, delicious inside. (For oven baking: Preheat oven to 200°C (400°F) and bake for 15-20 minutes).

Step 12

【Finished Product & Taste】 Your incredibly appetizing chicken breast jjajang calzone is now complete! The outside is slightly chewy, and the inside is packed with a sweet and soft jjajang filling made with sweet potato and banana. The subtle sweetness of the sweet potato, the heartiness of the chicken breast, and the savory depth of the chunjang combine to create a unique and captivating flavor. Enjoy it warm for the best taste!

Step 13

【Recommendation】 This chicken breast jjajang calzone is an excellent dish that offers both delicious taste and nutrition. It’s perfectly suitable as a diet lunchbox, and we highly recommend it as a satisfying meal or a healthy snack.
