  • 1 pack Cheonggukjang (fermented soybean paste, approx. 300-400g)
  • 2 blocks Firm Tofu
  • 1/2 stalk Green Onion (generously sized)

Let’s get started on making this deeply savory and delicious Cheonggukjang stew! This recipe will guide you to a perfectly satisfying bowl every time.

In a pot, add 600ml of water (about 3 cups) and 1 tablespoon of perilla oil. Then, add the pack of Cheonggukjang. Using a spoon or spatula, gently mash and dissolve the Cheonggukjang until it’s smooth and well-combined. Keep the heat on medium-low while dissolving for a smoother texture.

Dice the 2 blocks of tofu into bite-sized cubes, about 2cm square. Chunky tofu pieces add a wonderful texture and make the stew even more satisfying.

Finely chop the green onion. You can set some aside for garnish or add it all into the stew while it simmers.

Once the Cheonggukjang mixture begins to gently boil, add in the diced tofu and chopped green onions. Reduce the heat to low and let it simmer for a little longer. If you like a bit of heat, finely chop and add the 2 Korean green chili peppers now. (You can omit or adjust the amount of chili peppers to your preference.)

Finally, add 1 tablespoon of red pepper powder (Gochugaru) to enhance the savory and slightly spicy notes of the stew. Let it simmer for another moment to allow all the flavors to meld together beautifully. Your delicious Cheonggukjang stew is ready!
