Cooking Instructions

Step 1

This baby napa cabbage roll hot pot is a dish that beautifully conveys a parent’s wish to take care of their family’s health through delicious and nutritious food.

Step 2

First, prepare all the fresh vegetables and ingredients for the hot pot. Wash and prepare the firm tofu, ground pork, chives, crown daisy, shiitake mushrooms, oyster mushrooms, enoki mushrooms, and green onion for added fragrance.

Step 3

Lightly season the ground pork with soy sauce and pepper (optional), then let it marinate for a short while to tenderize the meat.

Step 4

In a pan with a little oil over medium-low heat, sauté the marinated ground pork along with the minced garlic and mashed tofu until well combined and fragrant. Make sure to mash the tofu as you stir-fry so it integrates smoothly with the pork.

Step 5

Add finely chopped scallions (or chives) to the sautéed pork mixture and stir-fry briefly to enhance the aroma. This step makes the filling even more flavorful.

Step 6

Carefully remove the outer leaves of the baby napa cabbage. Bring a pot of water to a boil with a pinch of salt. Blanch the cabbage leaves for about 2-3 minutes, placing the thicker white parts downwards first. Be careful not to overcook, as they will become too soft. Immediately plunge the blanched cabbage into cold water to stop the cooking process, then drain well.

Step 7

If the water used for blanching the cabbage is still warm, briefly blanch the chives for about 10 seconds. Chives wilt very quickly, so a short blanch is key.

Step 8

Rinse the lightly blanched chives in cold water and drain them. They are now ready to be used.

Step 9

Place a portion of the cooked pork filling onto a drained cabbage leaf. Add some blanched chives on top, then roll the cabbage tightly like making sushi. You can use a chive strand or the cabbage stem to tie the roll securely so it doesn’t unravel.

Step 10

Arrange the prepared ingredients attractively in a deep hot pot. Start by placing some oyster mushrooms, enoki mushrooms, and green onions at the bottom, then arrange the cabbage rolls around the sides.

Step 11

Fill the hot pot generously with the baby napa cabbage rolls, arranging them around the edges. This creates a visually appealing and abundant presentation.

Step 12

Add the ingredients for the hot pot broth to the pot. If you prefer a clear broth, you can use anchovy-kelp stock. The flavors from the sautéed pork filling, mushrooms, and vegetables will naturally meld together as it simmers.

Step 13

Prepare the broth that will add depth to the flavor. Add the baby napa cabbage rolls, crown daisy, enoki mushrooms, oyster mushrooms, green onions, mashed tofu, and sliced shiitake mushrooms to the pot. Simmering these ingredients with the seasoning of soy sauce, minced garlic, sugar, and sesame oil will create an exquisite umami flavor. If using anchovy-kelp stock, adjust the seasoning with the provided amounts.

Step 14

Neatly layer the baby napa cabbage rolls, crown daisy, enoki mushrooms, oyster mushrooms, green onions, mashed tofu, and sliced shiitake mushrooms into the hot pot. Packing the ingredients tightly will make the hot pot look more abundant and appetizing when cooked.

Step 15

Your delicious cabbage roll hot pot is ready! The combination of warm broth, tender cabbage, and savory filling makes for a satisfying and hearty meal. Enjoy!
