Hearty Cabbage and Corn Toast

Here’s a special toast recipe that my daughter absolutely loves! It’s made with a delicious salad of crisp cabbage and sweet corn kernels, creating a wonderful texture and flavor combination that we often enjoy. This toast uses simple ingredients to achieve a rich taste, making it perfect for breakfast, a quick lunch, or a delightful snack for kids!
Main Ingredients- 8 slices of bread
- 4 eggs
- 8 slices of cheese
- 16 slices of ham (or to your preference)
- Approx. 16 chicory leaves (or lettuce, to your preference)
- Approx. 1/4 cabbage, shredded
- Approx. 1/2 can of corn kernels, drained
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, pan-fry the ham slices until golden brown. Grilling the ham enhances its flavor, making the toast even more delicious. Set the cooked ham aside.
Step 2
Toast the bread slices lightly in a toaster or a dry pan. Warm and slightly crispy bread significantly improves the toast’s texture. Be careful not to toast them too dark or hard.
Step 3
Finely shred the cabbage. For an extra crisp bite, soak the shredded cabbage in ice-cold water for about 10 minutes, then drain thoroughly. Drain the canned corn kernels completely. In a bowl, combine the shredded cabbage and drained corn. Add the mustard, ketchup, and mayonnaise, and mix well to create the salad. Taste and adjust the dressing according to your preference.

In a large bowl, crack the eggs and beat them well. Add any finely chopped vegetables you like (e.g., onion, bell pepper) along with a pinch of salt and pepper. Heat a lightly oiled pan and pour the egg mixture to cook a thin omelet or egg pancake. Cooking it thinly makes it easier to place inside the bread. Cut the cooked egg into portions sized to fit your bread slices.

Cut the cooked egg portions in half, matching the size of your bread slices. This helps them fit neatly and layer well within the toast.

Spread a thin layer of mustard onto one side of each toasted bread slice. The mild tang of the mustard complements the other ingredients beautifully, adding another layer of flavor.

Now it’s time to assemble the toast! On the mustard-spread side of a bread slice, layer the cut egg portion, a slice of cheese, a generous spoonful of the cabbage and corn salad, chicory (or lettuce), and the cooked ham slices. Top with another slice of bread. Finally, cut the assembled toast in half for easy eating. Your delicious toast is ready!

I used leftover chicory from the fridge, but crisp lettuce works wonderfully too. Even though I assembled this with ingredients I had on hand, the toast turned out surprisingly rich and flavorful!
