Pizza Ingredients

  • 100g thinly sliced beef for bulgogi
  • 1/4 onion
  • 1/6 carrot
  • 1/4 zucchini
  • 1 handful of tteokguk tteok (rice cake slices) (or a tortilla/dumpling wrapper)
  • 50g mozzarella cheese

Bulgogi Marinade

  • 1 Tbsp soy sauce
  • 1 tsp sugar
  • 1/3 tsp sesame oil
  • 1/2 tsp sesame seeds
  • 1/3 tsp minced garlic
  • 1/3 tsp cooking wine (mirin or sake)

Cooking Instructions

Marinate the thinly sliced beef for bulgogi by mixing it with the marinade ingredients: soy sauce, sugar, sesame oil, sesame seeds, minced garlic, and cooking wine. You can also use store-bought bulgogi sauce for convenience. (The marinade quantity listed is for 400g of beef, so adjust accordingly for 100g.)

Prepare the vegetables by dicing the onion, carrot, and zucchini into similar bite-sized pieces or thin juliennes, suitable for pizza toppings. Feel free to use any leftover vegetables you have on hand.

Heat a little oil in a pan over medium heat. Sauté the onions first until they become fragrant and slightly translucent, then add the carrots and stir-fry. Finally, add the zucchini and sauté everything together until the vegetables are slightly tender. Season lightly with salt.

Spread the sautéed vegetables out on a plate or cutting board to cool. This helps to evaporate any excess moisture from the vegetables, preventing the pizza from becoming soggy.

In the same pan (or a clean one), cook the marinated beef until it’s browned. If the beef pieces are large, cut them into smaller, bite-sized pieces with kitchen scissors while they are still warm. (Tip: If you’re adding mushrooms, sauté them along with the beef. Dried shiitake mushrooms, rehydrated, or pre-cubed mushrooms work well.)

Let’s use some frozen tteokguk tteok (rice cake slices)! Briefly soak the tteokguk tteok in boiling water for about 1-2 minutes until they become slightly softened. Drain them well. Heat a little perilla oil (or sesame oil) in a pan and lightly pan-fry the rice cakes until they are golden and slightly chewy. This adds a wonderful texture. Alternatively, you can use a tortilla or a dumpling wrapper as your pizza base.

Arrange the pan-fried tteokguk tteok on the bottom of your pizza-making dish to form the crust. Spread a thin layer of your favorite tomato sauce evenly over the rice cakes. (You can experiment with other sauces like gochujang sauce or even a simplified bulgogi sauce for a different flavor profile.)

Generously layer the cooled, sautéed vegetables over the sauce. The colorful mix of vegetables not only adds visual appeal but also a variety of flavors and nutrients.
