  • 1/2 medium onion, thinly sliced
  • 1/2 package enoki mushrooms, root end trimmed and separated
  • 1 red chili pepper, seeds removed and thinly sliced diagonally
  • 1/3 stalk green onion, sliced diagonally into 3-4cm pieces

Broth Ingredients

  • 3 cups kelp broth (made by soaking kelp in cold water for 15 minutes, then simmering briefly)
  • 1/2 Tbsp soy sauce for soup (guk-ganjang)
  • Pinch of salt (to taste)

Bulgogi Marinade

  • 4 Tbsp soy sauce
  • 2 Tbsp rice wine (mirin)
  • 2 Tbsp minced green onion
  • 2 Tbsp onion juice
  • 2 Tbsp toasted sesame seeds (ground)
  • 2 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 1 Tbsp oligosaccharide (for sweetness and gloss)
  • 1 Tbsp sugar
  • Pinch of black pepper

Cooking Instructions

First, let’s prepare the delicious marinade that will make our bulgogi flavorful! In a bowl, combine 4 Tbsp soy sauce, 2 Tbsp rice wine, 2 Tbsp minced green onion, 2 Tbsp onion juice, 2 Tbsp ground sesame seeds, 2 Tbsp sesame oil, 1 Tbsp minced garlic, 1 Tbsp oligosaccharide, 1 Tbsp sugar, and a pinch of black pepper. Mix everything thoroughly until well combined. Evenly distributing the ingredients ensures the marinade coats the meat beautifully.

Now, it’s time to prepare the beef. Gently press the bulgogi-cut beef with paper towels to remove excess blood. This helps reduce any gamey smell and allows the marinade to penetrate better. Cut the beef into bite-sized pieces (about in half). Place the beef in the prepared marinade and gently toss until each piece is well-coated. Let it marinate for at least 20 minutes for the best flavor.

The secret to a delicious hot pot is the broth! Let’s make a clear kelp broth. Lightly rinse the kelp under cold water to remove any grit. Then, cut it into manageable pieces with scissors. Place the kelp and 3 cups of water in a pot, starting with cold water. Bring it to a gentle simmer. Once the water starts to boil, immediately remove the kelp to prevent the broth from becoming bitter. This kelp broth will add a wonderful depth of flavor to your hot pot.

To the kelp broth, add 1/2 Tbsp soy sauce for soup (guk-ganjang) and a pinch of salt, adjusting to your preference, to create a savory and flavorful broth. It’s best to add the salt gradually while tasting, ensuring the broth is seasoned perfectly without being too salty, allowing the natural flavors of the ingredients to shine.

Now, let’s prepare the vegetables for the hot pot. Thinly slice the onion. Trim the root end of the enoki mushrooms and gently separate the strands. Slice the red chili pepper and green onion diagonally to add color and a fresh taste.

All our ingredients are ready! Arrange the sliced onion, marinated beef, green onion, and red chili pepper attractively in your hot pot or a wide, shallow pot. Pour the prepared kelp broth over the ingredients, enough to mostly cover them.

Once the beef is fully cooked, add the prepared enoki mushrooms. Enoki mushrooms cook quickly, so let them simmer for just 1-2 minutes until slightly softened, then turn off the heat immediately.
