Hearty Braised Saury with Potatoes
Canned Saury and Potato Stew
A quick and easy recipe for braised saury using canned saury and fluffy potatoes that will make you finish a bowl of rice in no time! The generous ingredients and savory broth are excellent!
Main Ingredients for Braised Saury with Potatoes- 1 can saury (including liquid)
- 3-4 potatoes (medium size)
- 1/4 onion
- 1 stalk green onion
- 2 Korean green chili peppers
- 1 Tbsp minced garlic
- A little red chili pepper (optional)
- Water (measured by canned liquid and can)
Flavor-Enhancing Seasoning Ingredients- 1.5 Tbsp red pepper flakes
- 4 Tbsp soy sauce
- 2 Tbsp cooking wine (mirin or cheongju)
- 1.5 Tbsp red pepper flakes

Cooking Instructions
Step 1
First, peel the potatoes and cut them into thick, bite-sized pieces, about 1.5 cm thick. Cutting them generously helps them maintain their texture without breaking apart during cooking.
Step 2
Chop the onion coarsely, and thinly slice the green onion and Korean green chili peppers diagonally. If you have red chili peppers, slice them as well to add color.
Step 3
In a deep pot, place the sliced potatoes. Pour in the entire contents of the canned saury, including the liquid. Add water equivalent to half the can to achieve the right broth consistency (approximately 1.5 to 2 cups).
Step 4
Add 1.5 Tbsp of red pepper flakes. You can add more if you prefer it spicier. Begin to boil over high heat.
Step 5
Once the liquid starts boiling, cover the pot, reduce the heat to medium, and simmer for about 5-6 minutes until the potatoes are somewhat tender. When the potatoes are partially cooked, stir in 1 Tbsp of minced garlic, 4 Tbsp of soy sauce, and 2 Tbsp of cooking wine to season. Adjust the soy sauce amount to your preference.
Step 6
Remove the lid and let it simmer vigorously. As the sauce starts to thicken, add the sliced green onions and Korean green chili peppers (and red chili peppers, if using). Simmer for a little longer to allow the sweetness and aroma of the vegetables to infuse into the stew.
Step 7
Once the sauce has reduced to a nice consistency and the ingredients are well-coated with the seasoning, your delicious braised saury with potatoes is ready! Serve it over hot rice and enjoy.
