New Year’s Morning Delight: Easy and Delicious Beef Rice Cake Soup (So-gogi Tteok-guk)
As the first rays of the new year’s sun greet you, this comforting soup is the perfect way to begin! In 2019, I rushed to the Korean market on New Year’s Day morning after watching the sunrise to gather ingredients for this hearty beef rice cake soup. Wishing you all a very Happy New Year! (1 cup = 235ml. Note: This recipe is for one generous serving, but yields enough for two bowls.)
Ingredients- Beef (e.g., top blade steak) 125g
- Rice cakes for Tteok-guk 2 handfuls (approx. 2 cups)
- Green onions 5 stalks
- Eggs 2 large
- Garlic, to your preference (minced or sliced)
- Seasoned seaweed (Gim) 10 sheets
- Beef bone broth (Sagol Gomtang) 3-4 cups
- Water 2 cups
- Olive oil 1 tablespoon
Cooking Instructions
Step 1
Prepare all the ingredients for a delicious beef rice cake soup! Fresh ingredients are the foundation for great taste.
Step 2
Thinly slice the garlic into pieces and cut the beef into bite-sized portions. I didn’t soak the beef to remove blood, and it turned out perfectly fine. It will still be delicious!
Step 3
Heat olive oil in a pan over medium heat and sauté the sliced garlic until fragrant. Garlic adds a wonderful depth of flavor to the broth, so feel free to use a bit more than usual if you’re a garlic lover!
Step 4
Once the garlic is halfway cooked, add the sliced beef and stir-fry them together. Cook the beef just enough to seal in its juices.
Step 5
When the beef is sufficiently sautéed, pour in the beef bone broth and water. Bring to a boil over high heat and let it simmer for about 10 to 15 minutes to allow the flavors to meld.
Step 6
While the broth is simmering, prepare the garnishes that will make your Tteok-guk extra special. 1. Finely chop the green onions. 2. Beat the eggs and cook them into thin omelets, then slice them into strips. 3. Cut the seaweed sheets into desired sizes.
Step 7
Once the broth has developed a rich flavor, add the rice cakes for Tteok-guk. When the rice cakes become slightly softened, add the chopped green onions and simmer for another 4 to 5 minutes. If you enjoy green onions, adding extra will give the soup a refreshing taste.
