  • 1 Tbsp rice wine or mirin (to remove beef odor)
  • 1.5 Tbsp sesame oil
  • 2 Tbsp soy sauce for soup (or fish sauce)
  • 1 Tbsp minced garlic
  • Pinch of salt (to taste)
  • Pinch of black pepper

First, cut the beef into bite-sized pieces, about 2-3 cm. Sprinkle 1 tablespoon of rice wine over the beef and gently massage it in. Let it marinate for about 10 minutes to remove any gamey odor and tenderize the meat. This step is key for a clean, delicious broth!

Soak the dried seaweed in cold water for about 15-20 minutes until it becomes soft and pliable. Rinse it thoroughly multiple times to remove excess salt, then squeeze out as much water as possible. Finally, cut the rehydrated seaweed into roughly 5cm lengths. (Tip: 12g of dried seaweed expands significantly, so adjust water volume as needed if you prefer a thicker or thinner soup).

Heat a pot over medium-low heat and add 1.5 tablespoons of sesame oil. Once the oil is warm, add the marinated beef. Break up any clumps and stir-fry until the beef is no longer pink on the outside. Be mindful of the heat to prevent burning.

Once the beef is mostly cooked, add the rehydrated seaweed to the pot and stir-fry it with the beef for about 2-3 minutes, until the seaweed turns a vibrant green. Stir-frying the seaweed helps release its flavor into the broth. Then, pour in 8 cups of water. Cover the pot, reduce the heat to medium-low, and let it simmer for 15-20 minutes, allowing the flavors of the beef and seaweed to meld beautifully.

After simmering, when the broth has developed a deep flavor, add 1 tablespoon of minced garlic and 2 tablespoons of soy sauce for soup to begin seasoning. You can substitute fish sauce for soy sauce if you prefer.
