This Beef and Mushroom Porridge is a special breakfast planned from the night before. We’ve toasted the rice for a nutty flavor and generously added fresh beef and fragrant mushrooms for both nutrition and taste. It’s perfect for when your little one feels a bit under the weather, or simply when you need a nourishing and satisfying meal. Follow these easy steps to create a warm and delicious breakfast that will brighten your morning!
Main Ingredients- 150g minced beef
- 2 cups rice (short or glutinous)
- 10 button mushrooms
Beef Marinade- 1 Tbsp soy sauce
- 1 Tbsp pear juice
- 1 Tbsp sesame oil
- Pinch of black pepper
- 1/2 Tbsp minced garlic
- 1/2 Tbsp chopped green onion
Broth and Seasoning- 9 cups anchovy-vegetable broth (or rice water)
- Sesame oil
- Soy sauce or Korean soup soy sauce
- Salt
- 1 Tbsp soy sauce
- 1 Tbsp pear juice
- 1 Tbsp sesame oil
- Pinch of black pepper
- 1/2 Tbsp minced garlic
- 1/2 Tbsp chopped green onion

Cooking Instructions
Step 1
Let’s start with the first step for our warm and nutritious Beef and Mushroom Porridge! Rinse 2 cups of rice thoroughly. Instead of soaking the rice in water for a long time, drain it well after rinsing and set it aside. This helps prevent the rice grains from clumping and makes for a fluffier porridge.
Step 2
Bright and early, let’s make a delicious broth! Combine anchovies, kelp, any leftover vegetable scraps (like carrot peels, onion skins, white parts of green onions), and the stems of button mushrooms. Simmer them vigorously to extract a fresh and deep-flavored broth. While the broth is simmering, continue with preparing the other ingredients.
Step 3
Prepare the button mushrooms, which will add wonderful flavor to the porridge, and the minced beef. If you have leftover button mushrooms from making steak, they are perfect to use here. Fresh minced beef adds a savory taste and a pleasant texture to the porridge.
Step 4
Thinly slice the prepared button mushrooms into bite-sized pieces. Slicing them not too thick will ensure they become tender and easy to enjoy with the porridge.
Step 5
Now it’s time to marinate the beef! In a bowl with 150g of minced beef, add 1 Tbsp soy sauce, 1 Tbsp pear juice, 1 Tbsp sesame oil, a pinch of black pepper, 1/2 Tbsp minced garlic, and 1/2 Tbsp chopped green onion. Mix well with your hands until everything is evenly coated. (Tip: If you have extra beef, you can set it aside to make another side dish.)
Step 6
Heat 1.5 Tbsp of sesame oil in a pot suitable for cooking porridge. Add the drained rice and stir-fry over medium-low heat, being careful not to burn it. Once the rice grains turn translucent and can be easily crushed when rubbed between your fingers, add the marinated minced beef and stir-fry again with the rice. If the rice starts sticking to the bottom of the pot, add a little broth at a time while stirring and continue toasting; this will make the rice grains even more fragrant.
Step 7
Once the minced beef is cooked and has turned from red to opaque white, pour in all the prepared broth. Stir well to combine the rice and beef with the broth.
Step 8
After adding the broth, let it simmer gently. It’s crucial to stir the porridge regularly, scraping the bottom of the pot with a spatula to prevent it from sticking. Stir patiently and continuously.
Step 9
When the rice grains have softened and the porridge has reached a creamy consistency, add the sliced button mushrooms. Let it simmer for a little longer after adding the mushrooms.
Step 10
Adjust the consistency of the porridge to your liking. I used a total of 9 cups of broth, but feel free to add more or less broth depending on whether you prefer a thinner or thicker porridge. Continue to simmer, adding more broth gradually until you achieve your desired texture.
Step 11
Finally, it’s time to enhance the flavor! When the porridge is nearly done, drizzle in about 1/2 Tbsp of Korean soup soy sauce (or regular soy sauce) to add aroma. A subtle hint of soy sauce makes this Beef and Mushroom Porridge even more delicious.
