Beef and Dried Radish Greens Soybean Paste Stew

  • 200g Beef (stewing cut, lean portion)
  • 100g Dried Radish Greens (soaked and thoroughly washed)
  • 1/2 Green Onion
  • 2 Tbsp Soybean Paste
  • 5 cups Anchovy-Dashi Broth (approx. 1L)
  • 1 Tbsp Minced Garlic
  • A little Fish Sauce or Soup Soy Sauce (for seasoning)

Cooking Instructions

Step 1

First, prepare the grilled gizzard shad. Lightly salt the cleaned gizzard shad for seasoning. Heat a generous amount of vegetable oil in a pan over medium heat. Sear both sides of the fish until golden brown and crispy. Once cooked, place the grilled fish on paper towels to drain excess oil.

Step 1

Step 2

Arrange the cooked gizzard shad on a plate in appealing portions. Garnish with finely chopped green onion and a sprinkle of savory toasted sesame seeds to complete this delicious grilled fish dish. Enjoy it alongside your main meal for a more abundant dining experience.

Step 2

Step 3

Now, let’s move on to making the Beef and Dried Radish Greens Soybean Paste Stew. In a bowl, combine the pre-soaked and washed dried radish greens, cut into bite-sized pieces. Add 2 tablespoons of savory soybean paste and gently mix with your hands until the paste is well incorporated. Let it marinate for a while to allow the flavors to deepen; this step ensures the radish greens absorb the rich taste of the soybean paste.

Step 3

Step 4

Pour 5 cups of anchovy-dashi broth into a pot and add the marinated dried radish greens. Bring to a boil over high heat, then reduce to medium-low. Simmer gently for about 10 minutes, or until the radish greens are tender. Cooking them until soft is crucial for a pleasant texture and easier digestion.

Step 4

Step 5

Once the radish greens are tender, add 200g of sliced beef and 1 Tbsp of minced garlic. Season with a little fish sauce or soup soy sauce to adjust the taste as needed. Finally, add the diagonally sliced green onion and simmer for another moment. Your deeply flavorful and savory Beef and Dried Radish Greens Soybean Paste Stew is now ready. Enjoy it with a hot bowl of rice!
