Main Ingredients

  • Roe (Al) 200g
  • Roe (Gon-i) 305g
  • 1 Squid (cleaned and prepared)
  • 20 Shrimp (peeled and deveined)
  • 1/2 Onion (sliced into strips)
  • 1/2 Green Onion (sliced diagonally)
  • 70ml Water (for blanching seafood)
  • 300g Bean Sprouts (washed thoroughly)

Starch Slurry

  • 1.5 Tbsp Cornstarch
  • 3 Tbsp Water

Cooking Instructions

Step 1

First, prepare the key ingredients for the seafood stew. Choose your preferred seafood such as roe, squid, and shrimp. Slice the squid into bite-sized pieces and peel and devein the shrimp for a clean preparation.

If using frozen roe (Al) and gon-i, thaw them and then blanch them briefly in boiling water. This step helps to prevent the gon-i from breaking apart and keeps the roe from clumping together.

Rinse the blanched roe and gon-i under cold water and set aside. This ensures a cleaner taste.

Prepare the vegetables next. Slice the green onion diagonally about 0.5cm thick, and thinly slice the onion into strips. Slicing them this way will provide a pleasant texture.

Now, let’s make the delicious seasoning sauce. In a bowl, combine gochujang, gochugaru, sugar, soy sauce, mirin, and minced garlic. Mix well to create the sauce.

Finally, add a pinch of black pepper to the seasoning sauce for an extra kick of flavor. Mix everything together thoroughly to complete the sauce.

Prepare the starch slurry in advance. In a small bowl, mix 1.5 tablespoons of cornstarch with 3 tablespoons of water until smooth and lump-free. This slurry will be used later to thicken the stew. If it thickens in the bowl, just stir it again before use.

Heat a little cooking oil in a large pan or wok. Add the sliced green onions and sauté over medium heat to create an aromatic green onion oil. Cook until the fragrance of the green onions is fully released.

Once the green onion oil is ready, add the prepared squid and stir-fry briefly. Then, add the shrimp and continue to stir-fry. Finally, add the sliced onions and stir-fry them together.

Add the washed bean sprouts to the pan with the stir-fried seafood and vegetables. Pour in all of the prepared seasoning sauce and 70ml of water. Stir everything together to allow the sauce to coat the ingredients.

Continue to stir-fry until the sauce begins to thicken slightly. When the stew reaches your desired consistency, gradually add the starch slurry while stirring to thicken it. Cook until it reaches a rich, glossy finish. Your delicious and hearty seafood stew is now complete!
