Main Ingredients- 2 cups soaked rice
- 5 small potatoes (approx. 100g)
- 50g ginkgo nuts
- 75g chestnuts
- 2 dates (seeds removed and thinly sliced)

Step 1
Making rice with fresh, seasonal potatoes creates a hearty and nutritious meal. Shall we start making potato rice that will warm your body and soul on these chilly days?

Peel the potatoes and dice them into approximately 1-1.5cm cubes. Soak the diced potatoes in cold water briefly to prevent browning.
Step 3
Rinse the rice and prepare 2 cups for a 2-serving meal. Soak the rice for at least 4 hours to allow it to absorb water thoroughly. Soaking the rice beforehand makes it much softer and moister.
Step 4
Prepare the additional ingredients to enhance the flavor of the potato rice. Remove the shells from the frozen ginkgo nuts. Peel and roughly chop the chestnuts leftover from ancestral rites. Remove the seeds from the 2 dates and thinly slice them into strips.
Step 5
Place the soaked rice in a pot and add 1.5 cups of anchovy-kelp broth or rice water. Start cooking the rice over low heat with the lid on, rather than high heat. Adjust the amount of cooking liquid based on the type of rice and how long it was soaked.
Step 6
Feel free to add other ingredients like dried shiitake mushrooms or beans in addition to the chestnuts and ginkgo nuts, according to your preference. Create your own special potato rice using whatever leftover ingredients you have at home.

While the rice is cooking, prepare the delicious seasoning sauce. In a small bowl, combine 2 Tbsp soy sauce, 1 Tbsp red pepper flakes, 1 tsp sugar, 1 tsp minced garlic, and 1 tsp sesame oil, and mix well. Finely chop 1 Korean chili pepper and about 2cm of the white part of a green onion and add them to the sauce for a refreshing and spicy kick.

When steam begins to rise from the pot, the cooking liquid should be mostly absorbed and the rice grains should be fluffy. The fluffy potatoes and distinct rice grains come together to create a visually appealing and nutritious potato rice. It’s also an excellent option for a diet meal.
