With just ‘miso paste’, you can quickly and easily make this soup that’s perfect for the whole family. Using anchovy-kelp broth adds a deeper, richer umami flavor. Ingredients

  • Anchovy-kelp broth: 3 cups (approx. 600ml)
  • Miso paste: 2 Tbsp (Awase miso recommended)
  • Firm tofu: 1/2 block (approx. 150g)
  • Dried seaweed: A handful (about 1 cup when rehydrated)
  • Minced garlic: 1/3 tsp (optional)
  • Green onion: A small bunch (about 1 handful)

To make a delicious miso soup, start by preparing a basic broth with anchovies and kelp. While you can use plain water, using anchovy-kelp broth will result in a much deeper and richer flavor. (Yields about 3 cups)

Once the anchovy-kelp broth begins to boil, add 2 tablespoons of miso paste and stir well to dissolve it completely, ensuring there are no clumps. (I used Awase miso paste for its rich umami flavor. You can easily find it in most major supermarkets these days.)

Before cooking the soup, soak the dried seaweed in cold water for a short period (about 5-10 minutes). Be careful not to over-soak it. Aim for about 1 cup of rehydrated seaweed. Dice the tofu into approximately 1.5cm cubes for easy eating.

When the broth with dissolved miso paste returns to a boil, add the rehydrated seaweed and the diced tofu. Let it simmer together over medium-low heat until well combined.

If you prefer a smoother, less intense flavor from the miso paste, add a tiny amount of minced garlic (about 1/3 tsp) and let it simmer. This will make the soup taste cleaner and more mellow.

Once the seaweed is tender and the tofu pieces float to the surface, your soup is almost ready! Finally, add the thinly sliced green onions and simmer for another moment. Your delicious Seaweed Miso Soup is complete.
