  • 300g pork shoulder or belly (cut for stew or stir-fry)
  • 300g kimchi (well-fermented kimchi creates a deeper broth flavor)
  • 10cm green onion (sliced diagonally)
  • 1/2 onion (sliced)
  • 1 bunch enoki mushrooms (trim ends and separate)
  • 1 Tbsp minced garlic

Seasoning Paste
  • 1 Tbsp sugar
  • 2 Tbsp gochugaru (Korean chili flakes for spiciness)
  • 2 Tbsp cooking wine (like mirin, to remove pork odor)
  • 1 Tbsp oligo-syrup (for gloss and sweetness)
  • 2 Tbsp soy sauce (for umami)
  • 2 Tbsp gochujang (Korean chili paste for savory depth)
  • 1 Tbsp sesame oil (for nutty aroma)
  • 1 Tbsp anchovy sauce (optional, for seasoning adjustment)

Cooking Instructions

Step 1

First, let’s prepare the seasoning paste for your delicious Pork Kimchi Stew. In a small bowl, combine 1 Tbsp sugar, 2 Tbsp gochugaru, 2 Tbsp cooking wine, 1 Tbsp oligo-syrup, 2 Tbsp soy sauce, 2 Tbsp gochujang, and 1 Tbsp sesame oil. Mix them thoroughly with a spoon until well combined. Ensure the seasonings are evenly blended.

Step 2

Now, it’s time to prepare the ingredients for the stew. Trim the hard ends off the enoki mushrooms and gently separate them into smaller clumps. Slice the 10cm green onion diagonally, and thinly slice the half onion. Cut the kimchi into bite-sized pieces. Have your 300g of pork shoulder or belly ready.

Step 3

In a large bowl or pot, place the 300g of pork and the prepared kimchi together. Pour all the delicious seasoning paste you made earlier over them. Wash your hands thoroughly and gently knead the mixture with your hands, ensuring the seasoning coats the pork and kimchi evenly. Marinating for at least 10 minutes will allow the flavors to meld beautifully.

Step 4

Heat a pot or deep pan over medium heat and add a little cooking oil. Add the marinated kimchi and pork to the pan and stir-fry. Cook for about 3-5 minutes, or until the pork begins to turn white on the outside and the kimchi releases a wonderful aroma. Stir-frying it once like this really enhances the savory flavor.

Step 5

When the pork is about halfway cooked, pour in 500ml of water. Add 1 Tbsp of minced garlic and bring it to a boil over high heat. Once it starts boiling, reduce the heat to medium.

Step 6

Once the stew is bubbling vigorously, add the sliced onions. Cover the pot and let it simmer for another 10 minutes, allowing the kimchi to soften and deepen in flavor. Stir occasionally to prevent sticking.

Step 7

After 10 minutes, taste the kimchi stew. If it’s a bit bland, add 1 Tbsp of anchovy sauce to adjust the seasoning to your liking. Finally, add the separated enoki mushrooms and diagonally sliced green onions, and simmer for a short while longer until they are tender. Your hearty and spicy Pork Kimchi Stew is now complete!
