Simple Recipe for Homemade Sundae Guk using Beef Bone Broth
Don’t let leftover sundae go to waste! You can easily make a rich and flavorful Sundae Guk. This hearty stew, perfect for warming up on a chilly day, is a crowd-pleaser for both kids and adults.
Main Ingredients- Sundae (including innards) 600g
- Baby Napa Cabbage 7 leaves
- Perilla Leaves 3 leaves
- Shiitake Mushrooms 5 pcs
- Onion 1/2 pc
- Commercial Beef Bone Broth 2 packs (approx. 1L per pack)
- Green Onion 1 stalk
- Cheongyang Peppers 3 pcs

- Soy Sauce or Salt (for seasoning)
- Minced Garlic 1/2 Tbsp (optional)
- Black Pepper, a pinch

Cooking Instructions
Step 1
Prepare all the ingredients needed to cook a delicious Sundae Guk. Wash the vegetables thoroughly and get ready to cut the sundae into bite-sized pieces.
Step 2
The secret to a deep and rich flavor! Pour 2 packs of commercial beef bone broth into a pot and bring it to a simmer over medium heat. The broth will develop a much deeper flavor once it starts boiling.
Step 3
While the broth is heating, roughly chop the baby Napa cabbage into pieces that are easy to eat. This adds a pleasant texture to the stew.
Step 4
Remove the stems from the shiitake mushrooms and slice them. Slice the onion thinly or dice it. Finely shred the perilla leaves to add a fragrant aroma.
Step 5
Once the beef bone broth is at a rolling boil, add the chopped baby Napa cabbage, onion, and shiitake mushrooms. Let it simmer until the vegetables are tender.

If the sundae pieces are too large, cut them into bite-sized portions (about 2-3 cm) using a spoon. Be careful not to break the sundae filling as you cut.
Step 7
When the vegetables are sufficiently tender, add the prepared sundae and simmer for another 5-7 minutes. The sundae will infuse the broth with more flavor as it cooks. At this point, season with 1 Tbsp of Gochugaru, soy sauce or salt to taste, and a pinch of black pepper. Finally, stir in 1 Tbsp of ground perilla seeds for a nutty aroma and rich flavor.

Final touches! Add the diagonally sliced green onions and the Cheongyang peppers for a spicy kick. Simmer for another moment. The refreshing taste of the green onions and the spiciness of the peppers will enhance the overall flavor of the Sundae Guk.
