Main Ingredients- 1 serving of chewy udon noodles
- 200g thinly sliced pork belly (samgyeopsal)
- 1/2 onion, thinly sliced
- 1 green onion stalk, cut into 4cm lengths
- 30g carrot, diced
- 300ml water for the curry broth
Curry Seasoning- 4 tablespoons curry powder
- 1/2 tablespoon butter
- 1 tablespoon sugar
- 1/2 tablespoon minced garlic
- A pinch of salt
- 4 tablespoons curry powder
- 1/2 tablespoon butter
- 1 tablespoon sugar
- 1/2 tablespoon minced garlic
- A pinch of salt
Cooking Instructions
Step 1
Begin by washing the green onion thoroughly. Then, cut it lengthwise into approximately 4cm pieces, keeping both the white and green parts. This size allows it to meld beautifully with the curry broth.
Step 2
Peel and wash the onion, then slice it thinly into strips. This preparation makes it easy to cook evenly within the curry sauce, resulting in a soft and pleasant texture.
Step 3
Wash the carrot after peeling, and then dice it into small, bite-sized cubes. The vibrant orange color of the carrots will add visual appeal to your curry.
Step 4
Now, let’s start cooking! Heat a pan over medium heat and add the thinly sliced pork belly. Cook it until it’s golden brown and slightly crispy. Frying the pork belly until crisp adds a wonderful texture and flavor.
Step 5
There will be delicious fat rendered from the pork belly in the pan. Use this flavorful oil to stir-fry the prepared onion, carrot, and green onion all together. Cooking them together infuses them with the pork’s essence.
Step 6
Continue to stir-fry the vegetables until they become tender and slightly golden, releasing their sweet aroma. This step is crucial for developing a deep and rich flavor in the curry broth. Be patient and let them cook through!
Step 7
Once the vegetables are well-sautéed, it’s time to create the curry broth. Pour 300ml of water into the pot and bring it to a rolling boil over high heat. Once boiling, proceed to the next step.
Step 8
When the water is boiling, add the curry powder (4 tablespoons), butter (1/2 tablespoon) for richness, sugar (1 tablespoon) for a touch of sweetness, minced garlic (1/2 tablespoon) for aroma, and a pinch of salt to taste. Reduce the heat to medium-low and let the curry simmer gently for about 10 minutes. Stir occasionally to prevent sticking. This simmering time allows the flavors to meld beautifully.
Step 9
In a separate pot, bring a generous amount of water to a boil. Once boiling, add one serving of udon noodles and cook according to package directions, or for about 2-3 minutes, until tender. Gently loosen the noodles as they cook to prevent them from clumping together.
Step 10
Once the udon noodles are cooked, immediately rinse them under cold running water. Rinsing cools the noodles, makes them chewier, and removes excess starch for a cleaner taste.
Step 11
Drain the rinsed udon noodles well in a colander. You can gently press them to remove any excess water. Place the well-drained noodles into your serving bowl.
Step 12
Finally, ladle the hot, rich curry broth generously over the udon noodles in the bowl. Your delicious Curry Udon is now complete! Serve immediately while warm for the best experience. You can garnish with nori flakes or extra chopped green onions if desired.
